WE LIKE fresh mushrooms and have them often, so I try to be a little inventive. This salad 'happened' one night when there was nothing but a carton of mushrooms in the refrigerator. The simple addition of chopped stuffed olives was such a hit that this salad has been one of our favorites ever since. -Mary Johnston, Palestine, Texas

Don't expect conventional nutrients from mushrooms, but they have hidden anti-cancer activity and may stimulate immune function, research finds. Add red pepper's vitamin C, olive oil's good fat, and the antioxidants in basil and garlic for a very healthful salad.

This is a warm salad - cooked mushrooms poured over mixed greens. The warm mushrooms are supposed to wilt the lettuce a bit. Try to use the pre-packaged mixed colorful lettuce which is sold in Grocery stores. A salad that is done in no time if you want to try something different.

Spinach, crumbly bacon, and mushrooms seem fated to be together in wonderful salads, and this one is no exception. But what makes these three ingredients even more tasty, is the warm tangy dressing that 's poured over them just before serving. Serves four. 

Warm Orange and Mushroom Salad

Everything in this recipe begins with bacon.. Lovely mushrooms are saut Eed in the drippings. The orange juice vinaigrette has bacon drippings stirred in. And when the final salad is combined, crumbled bacon joins the oranges segments, spinach, radicchio, hazelnuts and mushrooms.
