Amazing! Definitely wouldn't serve 6 as written--especially not when it's this good! I doubled the curry and put in a bit more rice as suggested by other reviewers and I'm glad I did both. I think I'll put double the chicken in next time, too.

Wonderful soup recipe! It turned out great the first shot and was very easy to make. I doubled the recipe, and have a delicious lunch for the rest of the week. Per advice from other reviews, I doubled (okay, tripled!) the curry because I think the suggested amount is too little. Also, I used 2 tbls of olive oil instead of butter to make it a little healthier, and tried using 1 cup of diced potatoes instead of rice and wheat. I grated the carrots and might try the same with celery next time, though it doesn't really matter. It turned out great, but next time I might stick to the rice. And I'm stoked to use coconut milk instead of cream next time! Haven't tried it, but I'm optimistic!

AMAZING!!! My first time making the recipe and I could not believe how easy it was and just how delicious it tasted! The whole house smelled amazing! I added an extra teaspoon of curry and 1 teaspoon of garam masala! Will def. make again. I am making a pot to gove to my parents tomorrow...bragging rights! ha ha.

Holy cow! This is an amazing recipe. My husband informed me that he wanted me to make this again soon - this is a keeper! I followed the recipe exactly. I do agree though that it was just enough for my family with no leftovers, so be careful to double it if you're serving more than three people.

My husband made this soup while I was at the gym and it was such a pleasant surprise to open the door to the house and have the aroma greet me. This yielded only two good bowls full for us, surprisingly. We always enjoy leftovers for lunch the next day, but no such luck this time. We left out the heavy cream on accident, but enjoyed it immensely anyway. We will definitely make this again. He said it was super easy.

deeee-lish! i didn't change much-except i doubled the curry and grated the apple. i also opted to leave out the cream , only because i didn't have any..and it was yummy as is. this will be something i make again..and i can't wait to see how it tastes tomorrow!

This is easily my favorite soup ever. I used to order this at a local restaurant but this recipe puts it to shame. My 15 y.o. daughter gave it a 9 out of 10 and my 7 y.o. son gave it "infinity." I give it a 5 out of 5 on this site's scale. I doubled the recipe for leftovers and added a little more curry for my personal taste. I also substituted Texmati brown rice because that's what I had in the pantry. I can't wait to make this again.

If I could give this soup 10 stars I would. This is the best recipe yet that I have tried on this site. I LOVED everything about it! I used a rotisery chicken from the night before for the meat and added 1/4 cup extra rice but I think that it didn't need it. I also was out of thyme but the flavor was restaurant quality. I am so proud of how it came out...Thank you!

This is simply wonderful soup. I add more veggies than it calls for (3 or 4 ribs of celery, 2 or 3 chopped carrots and a whole onion). Also a whole large apple ( or 2 if they are smaller). We love it served over mashed potatos. Truely comfort food !!!

Very good soup recipe! I only made a few changes. I used brown rice instead of white and added it with the broth. I omitted the cream and used 2 T butter instead of 4. Also I used the whole apple instead of just half. Oh, and I felt like this served 4 at the most, definitely not 6.

Full of flavor!! I substituted Quorn "chicken" to make it vegatarian and it turned out great. I also added fresh garlic. I would highly recommend this recipe.

I'm amazed my husband even tried this, he's so picky. But he came back for seconds, so I'll be making it again. This was a very tasty and 'homey' soup. My family loved it. I doubled the recipe thinking I would have lots of leftovers...I didn't have much and my family didn't eat like pigs. Next time, to really have leftovers, I will want to triple or even quadruple the recipe. This would seem excessive for alot of other recipes, but this soup is worth the ingredients to triple or quadruple it. Happy eating!

I skipped the cream completely because I didn't have any. Didn't miss it! I also used leftover rotesserie chicken and brown rice. Next time I will use more rice than they call for. I doubled the recipe and my family of 5(with one teenage boy) ate it up. Better than the recipe in my little box!

Last night, I looked at my package of chicken tenders wondering what to do with chicken AGAIN. Then I saw this recipe. Deliciously different and easy to make. I scaled for 8 servings (we like leftovers) and changed very little from the original recipe, exc. for adding garlic and using celery salt since I had no celery. I used my chopper to chop my veggies and apple into very small pieces. The next time I make it, I will not cover my pot -- think it would have condensed and had an even richer flavor if not covered. Since my veggies were cut so small, I didn't simmer quite as long before adding the chicken, apples and rice. Could perhaps use bit more rice, and I added a whole small apple but would have liked more apple for that sweet-savory combo. A bit of ginger would also be great. Added the cream at the end, warmed in the microwave first. The cream added a delicious creaminess, but I agree that eliminating it would still create a delicious and a bit healthier recipe. LOVED this recipe and will make it again soon!

Wow--this was delicious. I didn't know quite what to expect, but this soup was really, really good. I made a few changes--I added about 1/3 c red lentils to thicken the stew (and then omitted the flour and reduced the butter to two Tbs), I used brown rice instead of white, and I added in a couple of Fresno red chilis because I like spicy food. With or without the cream this was outstanding, but I think a tablespoon or so of cream in each bowl really added something (I didn't bother to heat it first, either). Great recipe--I plan to make it again this week!
