Very good cookie. However, the dough was very soft and sticky. I added about 1/2 cup more flour and chilled the dough for about 20 minutes. I also added quite a bit more sugar to the cinnamon/sugar rolling mixture. I baked the cookies at 400 degrees for 10 minutes, and removed them from the pans immediately. I used shiny insulated baking sheets covered with parchment paper and had no trouble with burning. Beware any kind of dark cookie sheet! The resulting cookie was just as described, tenderly crunchy on the outside and soft on the inside. I'll be making these again!
