Mr. Head's Spicy Tuna Melt

"A searing, tongue igniting tuna melt that will satisfy the spicy food lover in your house. Served best with a pale ale (may need more than one to douse the flames on this bad boy). Feel free to adjust ingredients as desired."

  1. Heat the vegetable oil in a skillet over medium heat. Add the onions and celery and season with a little kosher salt. Cook and stir until tender, about 5 minutes.
  2. In a medium bowl, stir together the tuna, mustard, mayonnaise and the sauteed onion and celery. Season with cayenne, blackened seasoning, parsley, and hot pepper sauce. Spoon onto half of the bread slices. Top each one with a slice of pepperjack cheese and then the remaining slices of bread.
  3. Spread butter onto the outsides of the sandwich. Fry in a skillet over medium heat until golden brown on the outside and cheese has melted, about 5 minutes total.

This is hands down the best tuna melt on the planet. The flavors are spectacular! Husband is a bit leery of tuna, but this one rocked his world! Mine, too. Prepared exactly as written.

I don't eat tuna and was looking for my husbands lunch and he loves it! I even think it smells good enough to try!

WOW! I could eat the tuna all by itself. Amazing flavors! I also substituted the olive oil for the vegetable, and used "Smart Balance" instead of butter, but otherwise kept everything the same. Excellent!

My husband is a very picky eater, but we both loved this recipe! I will make it whenever we want tuna melts.

This was the best tuna melt I have ever had. I loved the spicy flavors. The only thing I changed was to put it on chibatta bread and toast it on a panni pan. I couldn't stop eating the tuna fish cold. My husband and I just loved it.
