I used very finely diced red onion instead of dried, and I totally forgot about the mushrooms (oops!). The meatloaf was a little dry but had great flavor - it's a shame most of the cheese leaked out during the cooking. I spread a couple of slices of Swiss cheese over the loaf five minutes before it was done. Not bad at all. Thanks!

This was a fun, easy recipe to make, even though it called for use of a rolling pin, which I've never used before to make meat loaf. That part worked out great, the waxed paper made the roll-up really easy. I scaled the recipe down to use only 1 lb. of ground beef, and added just a small amount of diced green pepper to the mix. There were only two of us for dinner, and we cleaned it up. My husband really liked it, will definitely make this again.

I love this recipe. It is easy & fast to make. I removed the minced onions and used a layer of sauteed onions. I also used fresh sliced portobello mushrooms.

This was a lot of fun to make. I used turkey instead of beef and added spinach instead of mushrooms. Best meatloaf I have ever made. Will make again! Thanks for the recipe.

This was YUMMY! I did substitute "Garlic, Garlic" spice from Tastefully Simple for the onion. It was very easy to prepare, my kids loved it and I have NO LEFTOVERS!!! I served it with garlic mashed potatoes and green beans for an awesome family dinner.

I followed this recipe as is (except for the mushrooms, because I didn't have any on hand), and did not particulary care for this at all. I've used a number of recipes from this site and have been well pleased with most. I usually try the recipes with at least four stars, and was surprised that this one was not so good since it received 4 1/2 stars. None of my family liked this recipe. Even though I didn't use mushrooms, I don't believe they would have made a big difference. I wish I could rate this one higher, but I honestly can not.

First off, I would like to know why the 1st reviewer only gave it 3 stars if the recipe was so great. lol Anyway, this meatloaf recipe is DELISH!! It's far more better and different than ordinary/basic meat loaf recipes. Wow, I can't believe how wonderful it was. DH raved about it as well, and my 2 young daughters gobbled it up! I followed it to a "t", and next time I may try taking some of that extra sauce and pouring it over the top for the last 15 min. or so. I served this with spinach linguini tossed with extra virgin olive oil and some butter, and I sauted up some yellow pepper, garlic, tomato & italian seasoning and threw that in w/ the linguini as well. I can't wait to have the leftovers tomorrow! Thank you so much for such an awesome recipe!

~Super Supper~ should be the side name to this one. I used ground turkey instead of beef and I changed the tomato sauce and used spegehetti sauce instead. I also sauted chopped onions and fresh mushrooms and placed that in with the cheese and sauce before rolling it up. MMMM Good! I served it with butter and parsley angel hair pasta and corn. My husband was in bliss! Thank you for this post. It's a keeper!

I have made this a few times and my family just devours it! I have passed this recipe off to my family, friends, and students in my class at college. Everyone's family just loves it and it very pleased on such an easy recipe. There are NEVER leftovers. Thank you for such a yummy recipe.
