1 1/2 pounds lean ground beef
1/2 cup dry bread crumbs
1 egg, beaten
1 teaspoon instant minced onion
3/4 teaspoon salt
1/2 teaspoon leaf oregano
1 (8 ounce) can tomato sauce, divided
1 1/2 cups shredded mozzarella cheese
1 (6 ounce) can sliced mushrooms, drained

DIRECTIONS
In large bowl, combine beef, crumbs, egg, onion, salt and oregano. Stir in 3/4 cup tomato sauce; set aside. Cut 2 pieces of waxed paper 15 inches long. Place meat mixture in center of one rectangle; cover with second rectangle. With a rolling pin, press meat into a 13-in. x 9-in. rectangle. Remove top sheet of wax paper. Sprinkle meat with cheese and mushrooms; top with remaining tomato sauce. Roll up meat, jelly-roll fashion, starting at narrow end; use wax paper to help. Place meat seam side down; seal ends securely. Place in non-stick 9-1/4-in. x 5-1/2 in. x 2-3/4-in. bread pan. Bake at 375 degrees F for 30 minutes. Drain off any fat that accumulates; return to oven for 30 minutes.

First off, I would like to know why the 1st reviewer only gave it 3 stars if the recipe was so great. lol Anyway, this meatloaf recipe is DELISH!! It's far more better and different than ordinary/basic meat loaf recipes. Wow, I can't believe how wonderful it was. DH raved about it as well, and my 2 young daughters gobbled it up! I followed it to a "t", and next time I may try taking some of that extra sauce and pouring it over the top for the last 15 min. or so. I served this with spinach linguini tossed with extra virgin olive oil and some butter, and I sauted up some yellow pepper, garlic, tomato & italian seasoning and threw that in w/ the linguini as well. I can't wait to have the leftovers tomorrow! Thank you so much for such an awesome recipe!

I have made this a few times and my family just devours it! I have passed this recipe off to my family, friends, and students in my class at college. Everyone's family just loves it and it very pleased on such an easy recipe. There are NEVER leftovers. Thank you for such a yummy recipe.

Excellent MeatLoaf! When your three-year old child begins to requests for seconds (which she had formerly done only for pizza) ...you know it's gotta be good!

This was a fun, easy recipe to make, even though it called for use of a rolling pin, which I've never used before to make meat loaf. That part worked out great, the waxed paper made the roll-up really easy. I scaled the recipe down to use only 1 lb. of ground beef, and added just a small amount of diced green pepper to the mix. There were only two of us for dinner, and we cleaned it up. My husband really liked it, will definitely make this again.

I love this recipe. It is easy & fast to make. I removed the minced onions and used a layer of sauteed onions. I also used fresh sliced portobello mushrooms.

This was a lot of fun to make. I used turkey instead of beef and added spinach instead of mushrooms. Best meatloaf I have ever made. Will make again! Thanks for the recipe.
