Eggplant is layered with a veal sauce and feta cheese then baked. This Greek dish is fantastic served with any kind of potatoes as a main dish or makes a great appetizer as well. Guaranteed to be a hit with guests!

What makes the difference in this traditional Greek recipe is the grilled, not fried, vegetables, including eggplant, potatoes and zucchini. It's a lighter version of the famous Greek dish consumed in great quantities every summer in my country, by locals and tourists equally.

One of the most fabulous one dish meals ever! Eggplant baked casserole style layered with seasoned vegetables and Swiss cheese. Bread, a green salad, wine and it is a feast for any group.

Eggplant, zucchini, potatoes and onion are layered with tomatoes and lentils, and baked with a bechamel white sauce. 

Super Moussaka

This is hearty and wonderful Cooked bulgar lines the pan and is topped with thick slices of cooked eggplant. Next come bits of plump tomatoes and a fabulous bechamel sauce laced basil and nutmeg. Bake for 45 minutes and slice into eight servings.

This dish takes some assembly but is well worth it. A casserole of potatoes, layered with tomatoes and ground lamb, then covered with a cheese sauce. Most of the ingredients are everyday staples...with a very tasty result.

Stuffed Eggplant

A large eggplant is hollowed out, and it's flesh is mixed with Italian sausage, garlic, bread crumbs and Parmesan cheese. The filling is then stuffed back into the shells, topped with Parmesan cheese, and baked. Great as a main course but you can buy the mini eggplant and use them as a side dish or appetizer!

Summer Nights Eggplants

Eggplant is stuffed with sauteed eggplant, onion, peppers and bread crumbs, then topped off with some feta cheese and baked. I named it after the long summer nights I spent with my family on the balcony eating this tasty recipe, because at this season in Greece we have plenty of eggplants and cook them in various ways.
