Sweet, smooth, and delicious, this Southern pie is made with evaporated milk. It is so easy to make and bake, and it looks and tastes like it took hours to whip up. Wonderful hot or cold, and delightful dusted with freshly-grated nutmeg.

This lovely recipe makes two pies, so it 's perfect for delighting a small crowd. And it couldn't be easier. Eggs, sugar, evaporated milk, vanilla, cornstarch and butter are stirred together, poured into waiting crusts, sprinkled with coconut, and baked.

Exquisite Pie

This is a thick, creamy and wonderfully sweet custard pie filled with lots of coconut. It bakes up beautifully and is terrific served with unsweetened whipped cream with a dusting of nutmeg. 

Poor Man's Pecan Pie

For this sweet and rich pie, rolled oats masquerade as pecans and no one is the wiser. Corn syrup, sugar, eggs and butter are stirred into the batter, and when it 's baked, the oats take on the texture and taste of those lovely nuts. Serve with lots of whipped cream.
