8 ounces mostaccioli or medium tube pasta
1 egg
1 egg white
1 (16 ounce) container low-fat cottage cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese, divided
2/3 cup shredded Parmesan cheese, divided
1/3 cup minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups meatless spaghetti sauce, divided

DIRECTIONS
Cook pasta according to package directions. meanwhile, in a large bowl, combine the egg, egg white, cottage cheese, spinach, 2/3 cup mozzarella cheese, 1/3 cup Parmesan cheese, parsley, salt and pepper; set aside. Drain pasta; stir in 2 cups spaghetti sauce.
Layer half of the pasta mixture in an 11-in. x 7-in. x 2-in. baking dish coated with nonstick cooking spray. Top with spinach mixture, remaining pasta mixture and remaining spaghetti sauce. Cover and bake at 350 degrees F for 35-40 minutes or until bubbly. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5 minutes longer or until cheese is melted.

Nutritional Analysis: One serving equals 286 calories, 7 g fat (4 g saturated fat), 42 mg cholesterol, 837 mg sodium, 35 g carbohydrate, 4 g fiber, 21 g protein. Diabetic Exchanges: 2 lean meat, 2 vegetable, 1-1/2 starch.

I made this for a dinner we were having with friends and everyone loved it! I added in sausage since my husband is a meat lover and used red pepper and garlic spaghetti sauce. It was delicious!

I figured this would be bland, but it wasn't; it was delicious. I did add oregano and thyme but aside from that, I stuck close to the recipe and my boyfriend devoured it. Used fresh spinach which I sauteed with onions and garlic. Thanks, this was wonderful (and the leftovers even better)!

When I made this recipe, I used penne pasta, ricotta cheese (because I had it on hand) and pepperoni slices because my husband insisted on adding some form of meat. I read another review that suggested adding garlic and onion, but I used Newman's Own Sockarooni sauce and it is fabulous. This tastes very much like lasagne. I will use a full pound of pasta next time to make a full pan (9x13).

This recipe was quick, easy and contains everyday low-cost ingredents; just perfect for a working Mom! My entire family loved this meal. I was rushed and probably over did it on the cheese ingredents and may have even over-boiled the noodles a bit, but who knows, that may have only added to its yumminess!

I made this recipe exactly as stated and it was a big hit with my family. I'd like to experiment with it to add some garlic, maybe some other seasonings, but my kids like it so much that I'm afraid I'd be ruining a good thing. It's worth mentioning that if the noodles are not overcooked, the leftovers make a great lunch the next day.

This was fantastic!! My husband loved it - it is rare for him to rate anything without meat as 5 stars. I made the following changes: used 16oz pasta, 24 oz spaghetti sauce, used ricotta instead of cottage cheese. I also mixed in 2 tsp garlic, 1tsp basil and some italian seasoning (the kind with crushed red peppers) in the spinach mixture. Without the extra garlic and seasonings it would have been only 4 stars.

Yum, the whole family loved this! It was really simple. I used 2 eggs worth of refrigerated egg subsitute which seemed to work fine. The is a keeper!
