1 recipe pastry for a 9 inch double crust pie
1/4 cup white sugar
1/2 cup brown sugar
1/2 cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon vanilla extract
1/2 teaspoon almond extract
4 cups fresh strawberries, halved
2 tablespoons butter

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C.) Lay one crust into a 9 inch pie pan, making sure the edges extend slightly beyond the pan.
In a large bowl, mix together white and brown sugars, flour, cornstarch, cinnamon, nutmeg, vanilla and almond extract. Add the strawberries to the mixture and gently stir to coat thoroughly. Pour into the crust, mounding it slightly in the middle.
Cut the second crust into 1/2 inch strips and weave into a lattice over the filling. Roll up the extra dough on the bottom crust to seal down the lattice strips, then press with fingers to form a fluted edge. Dot with butter in the open squares. For a golden crust, brush lattice lightly with milk, then sprinkle with sugar.
Bake in the preheated oven for 35 to 40 minutes, or until golden brown.

As a professional chef I am always wanting to try new recipes and found this one intriguing with the different spices and extracts. I found this pie to be too sweet with too many overpowering flavors. My co-workers and I were unable to taste the natural flavor of the strawberries. I would reccomend omitting some of the sugar and the extracts.

I tried this pie thinking that the vanilla, almond extract, and spices would really complement the strawberries, but in fact I think they taste better on their own. The filling has a very nice consistency for a lattice top, but I would add more sugar to enhance the flavor.

this was great, it made me a little nervous being the first to rate when i'm taking it to a party, and typical of cooked strawberry pie, there was a ton of juice, i added tapioca and also used a pate sucree crust, really good flavor.. i'll make it again.

This was not very pleasing to me. I found the spices were so overwhelming you can't taste the strawberries. I would not try this again, but it was not the worst I have had.

This was the first pie I have ever made and for that being said, it was pretty darn good! The only thing I didn't like was the cinnamon flavor in it. It almost seemed to distract from the strawberry flavor too much. I will omit cinnamon next time I make it or at least decrease the amount I use.
