Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray muffin cups with cooking spray or line with paper liners.
  2. Beat sugar, butter, flax seed, vanilla, and eggs together in a bowl with an electric mixer until smooth and creamy.
  3. Sift flour, salt, and baking soda together in a separate bowl. Mix creamed sugar mixture, 1/2 cup at a time, into the flour mixture until fully incorporated and batter is stiff. Beat bananas into batter with an electric mixer on low. Fold chocolate chips and walnuts into batter; spoon into the prepared muffin cups, filling each cup 3/4 full.
  4. Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 25 minutes. Cool in the tins for 10 minutes before removing to cool completely on a wire rack.

  • Cook's Notes:
  • I use half whole wheat flour/half white, part agave or honey to increase the 'good for you' factor, and semi-sweet mini-chips to ensure that each bite has chocolate in it.
  • Also good zapped for 10 seconds and promptly served with vanilla ice cream!

They were tasty but very dry for me. I will have to incorporate some apple sauce when I try this recipe again. I liked how this recipe included flax seed.

This is the best banana bread or muffin recipe I have found. I did make one adjustment by adding a tsp of cinnamon.

Excellent as written. As a quick note, if you're short a banana, you can substitute with a 1/2 C applesauce-it still has a good banana flavor. We didn't notice a difference. :)

LOVE THIS RECIPE AND SO DO MY KIDS AND THEIR FRIENDS, I replaced the butter with flax seed and they turned out great and the kids had no idea. One tablespoon margarine equals 3 tablespoons flax seed.

Really Good! Made it exactly like said and it turned out great. They only took about 20 minutes to cook.

I used a tip from another reviewer, and replaced 3 T of the butter with 9 T flaxseed. Also used half all-purpose flour & half whole-wheat pastry flour. I cut back to 2/3 c. sugar & 1/2 c. choc chips and still very good.
