Moroccan Tagine

Tagines are Moroccan slow-cooked meat, fruit and vegetable dishes which are almost invariably made with mutton. Using lamb cuts down the cooking time, but if you can find good hogget (older than lamb, younger than mutton, commonly labeled 'baking legs' and sold cheaply) that will do very well.

Lentils, chick peas, and lots of fresh vegetables are simmer in an aromatic broth seasoned with cumin, coriander, and cinnamon. If you like, top each serving with a dollop of yogurt, chopped mint, and a pinch of cayenne pepper for a hearty one-bowl meal.

A true crowd pleaser, this sweet chicken is very juicy and goes very well with white rice. I have modified it from an original Djedjad recipe which calls for apricots.
