This is my new favorite muffin! I halved the recipe and did as follows: Used applesauce instead of apple butter. I also added 1/4 cup Wheat Bran and a TBSP of ground Flax. So tasty and perfectly spiced. The other recipe I had was too bland! Thanks for the recipe!

Contains note for making 12 bakery size muffins. Terrific recipe and kudos to Jaclyn. A solid 5 STARS. I made a few tweaks only for my personal taste that I will share with you to acknowledge how easy it is to add your own touches. Instead of raisins (wife hates them), I added crasins. Added 1/2 cup of shedded coconut. Used an entire 8 ounce jar of my home made apple/plum butter. Replaced the veggie oil with 1/4 cup of apple sauce. Cut sugar to 1 cup. Follow all other recipe guidelines and be sure not to overmix! If you do the 12 muffin version change your baking time to 30 minutes, and then let them sit in the pan for 10 minutes on a wire rack before removing from pan. This is one of our favorite things to take hiking. Wrap individually and carry in a hard sided container. Nothing like sitting on a mountain top eating one of these muffins!

These muffins are out of this world. I followed the recipe as written except for one thing. I used about 1 c of all purpose flour and 1 c of whole wheat flour. (I ran out of the white stuff.) I will definitely make these again!

These were soooo delicious! I made them as is, only adding some crushed pineapple and subbing dried cranberries for the raisins and subbing pecans for the walnuts! All the textures are great, and this recipe made two dozen for me. I will definitely be making these again!

Loved these muffins. Replaced the oil with a mashed banana to reduce the fat and sprinkled a little oatmeal and brown sugar on the top. Very moist and even the carrot haters in my family enjoyed them!

These were really good, as others suggested and I do quite often. I used half oil and half applesauce. Omitted the raisins and wheat germ(personal preference. They were really moist and not too sweet. The family loved them, reminded us of the ones we used to get at the bakery in Disneyland. Nest time I think I'll replace the apples with pineapples...yummy!

These are just delightful!! I did make some changes based on what I had available in the kitchen. I didn't have raisens, wheat germ, or walnuts so I replaced that with craisens (left over from holiday cooking), oat bran and pecans...very tasty and the cranberries made it so sweet!! I used no oil, 3/4 c. apple butter and 1/4 c. applesauce. I also used two apples instead of one (I felt mine were a bit smallish). The result was very moist and needed to be baked a bit longer (about 25 minutes due to the higher moisture in the apples). This is a great recipe... if only I can stop eating more than one at a sitting they would be "healthier".

quite a few ingredients and the texture is sort of chewy like lowfat stuff can be but it is tasty. I might add pineapple next time and maybe some nuts in it.

My husband and oldest son liked these. I used almonds instead of walnuts and pumpkin butter instead of apple butter. My muffins caved in the middle, but this was my fault. I am going to try making this a quick bread. I am still in search of a semi healthy breakfast option that everyone will eat!

Yum! I made these muffins even healthier by using all wheat flour and adding 1/3 cup flax seeds. I also used 2 apples, omitted the raisins (hate raisins), and added about a cup of toasted chopped walnuts (didn't do the wheat germ/walnut topping). They turned out great. Perfect for breakfast!

I loved these muffins, my 10 year old son loved them too. The only thing we did different, was substituted the sugar with 1 cup of Splenda. I might also try substituting the apple butter with apple sauce like another reveiw said. I gave these a 5, but my son said 3.5, so we'll give it an even 4. Definately making these again.
