These were absolutely delicious! I made them egg-free for my niece with allergies, but they were still very good. I can only imagine how good they would have been with the richness of the egg!

So tasty! I used Applesauce instead of Apple butter, and that made them just a hair too sweet. Next time, I will use less sugar, and probably use brown sugar. I made a double batch of these, and they were eaten within a week. I have received much praise for this one!

These were very good! I made some changes to simplify it a bit. I chopped up a can of carrots (didn't measure, just used the whole can), used two eggs instead of one egg and two egg whites, regular butter with about 1/2 tsp apple pie spice instead of apple butter (didn't have any), and applesauce in place of oil. I omitten the wheat germ because I couldn't find it in the store. Even with all the changes, these were very good! I'll definately make these again, next time I'll follow the recipe as written (except for the oil) and they'll be even better!

Delicious, relatively healthy muffins. Like most morning glory muffins, they are more time consuming to make than many other types of muffins, but worth it. I think next time I will cut down on the sugar a bit, maybe to 1 cup, as the raisins and apple add a fair amount of sweetness. Thanks for the recipe!

I am rating this recipe a solid 5. Although I did make some changes to satisfy my tastes, the recipe is a very solid and tasty recipe on it's own. Don't be afraid to experiment with different fruits, spices, and substitues as I did. You won't be sorry. Thanks for sharing!!

This recipe is great. My husband is a picky eater and I was able to sneak all kinds of fruits and vegetables in. I modified the recipe a little. I used 1c. flour and 1c. whole wheat flour, 1c. applesauce, 2 1/2tsp. baking powder and 1tsp. baking soda. This made them very light. I also added some other stuff I had laying around. 1c. shredded sweet potatoe, 1 banana, almonds, and dried cherries. I also used just 1c. sugar and 1/4c. honey to cut bake some of the sugar. I will be making this recipe again and again.

Awesome muffins! Modified with 1/2 white 1/2 whole wheat flour.Used Splenda instead of sugar, and apple sauce instead of apple butter. Skipped the wheat germ on top, mixed the walnuts with pinch of cinnamon. Don't have to feel guilty about eating these muffins!

I substituted the vegetable oil for applesauce. Also, I made only 12 muffins. Next time I make this, I would like to add some walnuts in the batter and secretly add flaked coconuts because husband despises coconuts. In addition, it took an extra 20 minutes to cook the muffins probably because I used applesauce rather than oil.

These muffins are super yummy and nutritious, too! I did modify a few things. Based on the previous reviews, I used 2 cups whole wheat flour, used brown sugar instead of white and reduced it to 3/4 cup, only used 1 cup of grated carrots (that's all I had), substituted coconut for the raisins, used applesauce instead of apple butter, used mashed bananas instead of oil, and I added 1/3 cup flax seed. Mmmm. Good!

Wonderful muffins. My picky 3-year-old asked for third helpings of this. I did make a couple small changes because I know what I like...I'm not fond of wheat germ so I left that off with no problems (just sprinkled walnuts on top) and I used all all-purpose flour because I'm not usually fond of wheat flour in my sweet breads. (This one probably would have worked better than most, but I'll stick with my personal taste.)

This is my new favorite muffin! I halved the recipe and did as follows: Used applesauce instead of apple butter. I also added 1/4 cup Wheat Bran and a TBSP of ground Flax. So tasty and perfectly spiced. The other recipe I had was too bland! Thanks for the recipe!

Contains note for making 12 bakery size muffins. Terrific recipe and kudos to Jaclyn. A solid 5 STARS. I made a few tweaks only for my personal taste that I will share with you to acknowledge how easy it is to add your own touches. Instead of raisins (wife hates them), I added crasins. Added 1/2 cup of shedded coconut. Used an entire 8 ounce jar of my home made apple/plum butter. Replaced the veggie oil with 1/4 cup of apple sauce. Cut sugar to 1 cup. Follow all other recipe guidelines and be sure not to overmix! If you do the 12 muffin version change your baking time to 30 minutes, and then let them sit in the pan for 10 minutes on a wire rack before removing from pan. This is one of our favorite things to take hiking. Wrap individually and carry in a hard sided container. Nothing like sitting on a mountain top eating one of these muffins!

These muffins are out of this world. I followed the recipe as written except for one thing. I used about 1 c of all purpose flour and 1 c of whole wheat flour. (I ran out of the white stuff.) I will definitely make these again!

These were soooo delicious! I made them as is, only adding some crushed pineapple and subbing dried cranberries for the raisins and subbing pecans for the walnuts! All the textures are great, and this recipe made two dozen for me. I will definitely be making these again!
