I made these muffins exactly as the recipe is written (I usually try to do this the first time). I will definitely make them again because they are very moist without having a lot of oil in them. The additions of the carrots, coconut, raisins, walnuts, pineapple etc were very good and in just the right amounts. The only thing I will change next time is to reduce the amount of cinnamon. I thought 3 tsp. was a bit overwhelming and left a strong spice taste in my mouth that was hard to get rid of. Next time I will try 2 tsp. of cinnamon. Oh, I didn't get 24 muffins, but only 16, but I filled the muffins cups 3/4 full. These muffins were even better the next day.

These were delicious! I made them pretty much as written except to substitute 1/2 whole wheat flour, and I didn't have any coconut. They were moist and light and smelled fabulous as they baked. Couldn't wait to dig in! Made a satisfying lunch with a piece of cheese and some fruit. Thank you!

Absolutely wonderful. Better than the other Morning Glory recipe from this site that I tried. The only change I made was adding a topping from another recipe: 2 TBS finely crushed walnuts plus 2 TBS wheat germ; all it added was appearence. These were SO GOOD!!

So good, very moist, the whole family loved them. I like that this recipe uses apple sauce instead of lots of oil, and lots of healthy stuff! Next time i'll add whole wheat flour intead of white. (but I can be a bit of a health nut)

These were pretty good... I need to make them again and follow the recipe exactly. I didn't have pineapple so I used canned pears & peaches, and I omitted the nuts. The flavor is really good, i think i would throw some honey or wheat germ into it next time. The recipe made a lot - 24 muffins plus a bit left over that I put into a loaf pan (it baked about 2 inches high) these were very moist muffins.

These muffins are fantastic. My daughter (who hates: coconut and raisins) LOVED these. She ate 20 of the 24 muffins!! I had to make a second batch. These muffins were the star of my family Christmas bruch!!

These little muffins are delish!! I used a dark non-stick mini-muffin pan - fill to the top and bake 16-17 min at 350. Very moist and no overpowering flavors. Unfortunately,the picture makes them look less appetizing then they really are.

Great recipe! The only thing I changed was that I left out the nuts. Everything else was the same and it came out delicous - will definately make again. It tastes like a delicious, lighter version of carrot cake. I ate them with fat free cream cheese and were very yummy.

Excellent recipe! I made the following changes: used whole-wheat flour, 3 c. finely chopped apples, 1 c. coconut, 1 c. raisins. No carrots, nuts or pineapple. The rest of the recipe stayed the same. This makes 36 muffins. Thanks!

We LOVE, LOVE, LOVE these muffins!!! I make several batches and freeze them or give them to friends. My kids, ages 9, 7 & 5, also love them before school or for a snack. There are so many variations you can make w/ the basic recipe. Enjoy!

Excellent! I used 2 cups flour and 1/2 cup oatmeal and some wheat germ for variety. Other than that, I followed the recipe exactly as posted and they were moist and delicious! Very good and pretty healthy too!

I was very pleased with these muffins, and my husband loved them! I've tried recipes for Morning Glory Muffins before, and found them heavy and greasy. These are light, moist and tasty - and healthier, too. Using just 1/2 cup of oil and adding applesauce makes the difference! The muffins taste even better the second day, and freeze well. I got 18 large muffins from the recipe.

My husband and toddler love these muffins. I made a few changes to make them a little healthier, substituting 1c. of whole wheat flour for all-purpose, adding ~1/8c. each of wheat germ and milled flax, and reducing the sugar to 3/4c. I also left out the nuts for the little one. All in all, a yummy and healthy recipe. It's great for sneaking in more fruits and veggies.

This is a good recipe for a crowd! I didn't have pineapple on hand so I made them without and they were still moist and delicious. They will keep for several days or they freeze well, too.

I have already rated this. I forgot to add one thing that I did different. Instead of mixing the flour I used 2 c whole wheat pastry flour. I filled up the muffin tins to the top and they were just perfect. So moist and delicious.

Our family came to Cape Cod for an early Thanksgiving. We did a brunch for when they arrived & made Morning Glory & froze them. Well, they almost did not make the freezer. They were wonderful!! Even all our grandchildren loved them. So very moist & tasty. I did 12 muffins & 1 loaf. Gotta be the best. Thanks Nana
