Moore's Cranberry Gelatin Salad

INGREDIENTS

  • 2 (3 ounce) packages raspberry flavored gelatin mix
  • 1 cup white sugar
  • 2 cups boiling water
  • 1 1/2 cups pineapple juice
  • 1 pound cranberries
  • 1 large orange, unpeeled
  • 1 1/2 cups crushed pineapple, drained
  • 2 cups seedless red grapes, halved
  • 1 1/2 cups diced apples

DIRECTIONS

  1. Add the sugar to the gelatin. Stir in the boiling water and stir until the gelatin is dissolved. Stir in the cold water or the pineapples juice. Chill until gelatin is thick.
  2. Finely grind the cranberries and the orange in food processor or run through the meat grinder.
  3. Add the ground cranberry mixture, drained crushed pineapple, grapes and cubed apples to the thickened gelatin. Pour mixture into one 9x13 inch pan or a large bowl. Refrigerate overnight before serving.

This cranberry salad was wonderful! So much so that my guests on Christmas found themselves filling up on this rather than meat and potatos. Full of texture and flavor much like that of my grandmothers. Loved it. Thanks Mary.

I got this recipe from this site several years ago and I've made it every Thanksgiving since. My cousins love it and always take some home because this recipe makes a lot. I've never been a big cranberry sauce or cranberry salad eater, but now, I just can't have Thanksgiving without this salad. It takes a lot of prep with chopping the apples, grapes, and orange, but it's worth it. It's also good with some pecans added.
