1 1/3 cups white sugar
2 tablespoons salt
1 cup white vinegar

6 cups peeled and sliced cucumbers
2 cups sliced onion

Directions

Stir sugar, salt, and vinegar together in a plastic container with a lid until sugar is mostly dissolved. Place cucumbers and onion in the vinegar solution; stir to coat. Cover container and refrigerate for at least 2 days, stirring occasionally.

These were pretty good, but even better on the 4th day, when I polished off the small batch I made! Loved how the cuke and onion were soft yet crunchy. I think a little mustard seed would be a nice addition, I'll give it a try next time. Will for sure make again, thanks!

I cut the vinegar with some water and used splenda instead of sugar. The kids ate them like candy!
