2 celery ribs, chopped
1 medium green pepper, chopped
2 tablespoons chopped onion
2 tablespoons butter or margarine
3 small zucchini, quartered lengthwise and sliced
1 medium tomato, chopped
1 tablespoon onion soup mix

DIRECTIONS
In a skillet, saute celery, green pepper and onion in butter for 6-8 minutes. Add zucchini; cook and stir over medium heat until tender. Add tomato and soup mix; cook and stir until the tomato is tender.

This was brilliant and best of all, so healthy. I did cut down on the amount of butter used to 1 tablespoon, but that's just personal preference. Even my son, who is normally fairly picky about his vegies gobbled this up and asked for more!! Thank you for sharing this great recipe

This recipe was OK, but it didn't have the taste I was hoping for. The dish was very healthy, but it needed more flavor. We added a little salt and pepper and topped it off with parmesan cheese, which helped. All-in-all, a very simple dish that was easy to make and good for you.
