This does not even compare to store bought turkey sausage! I made this for the second time this morning. The first time, I did not use ginger b/c I was out and I did not have dried sage, so I used poultry seasoning. I read other reviews that stated that the recipe could easily stand up to more seasoning, so I was pretty liberal with my measurements. I made half into patties and froze them for easy breakfasts, and the other half I fried up and used in a breakfast casserole. Not a single person believed it was turkey sausage. DELICIOUS!

I, too, doubled the spices. Instead of frying I baked them at 350 for about 20 minutes then browned them in a skillet with no oil. Excellent!

OMG! This recipe is the bomb! You can't even tell you're eating ground turkey! For a 3 lb pkg of ground turkey, I add 2 tsp sea salt, doubled the rest of the spices, and added 1/2 t. ground thyme and 1 t. granulated garlic. I heated up a skillet on the spot (with a little canola oil) and fried up 2 small test patties. Hmmm..very good, but maybe I'dd add the 2 big Tbl maple syrup as other reviewers did...not so good. The sugar in the syrup carmelized (burned) on the outside--even on very low heat. I will use up this batch but leave out the maple syrup next time. Thanks for a great preservative free recipe!

I followed the recommendation of another review and added 1T of maple syrup and it turned out FANTASTIC! The seasonings were fine as written--I wouldn't double them as some have recommended, but if you like it on the spicy side, add cayenne.

I made this with 1 1/2 lbs of 93% turkey. It was too spicy for me, so 2 lbs would be better (as written). Some reviewers said that it wasn't spicy enough for them. I can only say, they must like things really hot. I didn't have sage, so I used poultry seasoning. This was a nice addition. I did cook it on low/med as I didn't want it to dry out. It was moister than I thought it would be, considering the fat content. I think I'll try adding some grated apple to it and see how that works. Over all, it's a surprisingly good recipe. I am not much of a ground turkey eater, but this is pretty yummy!

This is soooo good and easy!! I bought only one lb of the cheaper ground turkey (so I wouldn't waste as much money if I didn't like it) and halved the recipe. Wish I had bought more. Fried up all the patties (I made eight) for reheating later. Yummy!! Will try this with chili as some reviewers suggested.

For years, I've made my own sausage . Using spices to suit your own taste is an excellent bonus. This is just perfect. My husband was always very fond of the sausage gravy served over biscuits, and this works beautifully, minus all the excess fats. Wonderful recipe because you can season and then freeze in serving sized portions. Thanks for sharing! rd013

We loved this recipe!! To have sausage that doesn't have chemicals and nitrates in it is just a blessing! I used ground turkey, double the spices and added 2 TB maple syrup. Love it!!!

This is a breakfast staple for me now, I have made double batches of it 3 times now. I bake them and freeze to warm in the microwave. I follow the recipe, but throw in extra amounts of spice, except cayenne. For an on the go breakfast I scramble one egg, 2 whites, add some veggies of choice, break up half turkey pattie add a little cheddar and wrap it up in a high fiber whole grain tortilla. Keeps me full for hours.

Unlike the past, I have started to follow recipes exactly so I can comment. I was expecting something a bit on the bland side, instead it was flavorful. I usually halve new recipes and only used one pound of meat (and reduced the seasonings accordingly). I threw the meat with the seasonings into my cuisinart (since I don't have a spice grinder and wanted it well mixed). Maybe because it was mixed do thoroughly, I did NOT have to double the seasonings. I did take the recipe submitter's suggestion and used both sage and thyme. My husband said it was "great" and that the recipe is a keeper.

This was awesome. I have been wanting my own turkey sausage recipe for years. my son can only eat turkey and i am allergic to black pepper so here are some of the changes i made and it came out great. I used 1 pound of turkey instead of 2 (lots of people said they needed to double the spices so i just took out turkey since that is all i had on hand) then instead of all the black pepper i substituted grains of paradise and then added a pinch of black pepper and you could not tell the difference. My kids loved it because it was not too spicy and they hated sausage before. Thank you for posting this recipe.

Easy and delicious! They were great for breakfast and didn't make you feel 'heavy' afterward. I even baked mine (at 425 degrees for 20-25 minutes or so) and they came out nice and brown. I may never buy pre-made breakfast sausage ever again.

Jimmy Dean will not be happy because he has lost a good customer!! This recipe is wonderful and it is now the only breakfast sausage we eat. My family loves these breakfast sausage patties on an english muffin with egg and cheese. It is also wonderful chopped up with scrambled eggs or in an omlette. I have made this recipe with both ground turkey and ground chicken and it comes out great. Instead of forming it into patties I drop the raw mixture onto the hot skillet by the tablespoon as you would to make cookies. Then I flip them over with the spatula and flatten them with a rocking motion. You will need to flip these over again to cook thoroughly but I found this easier than trying to form the patties by hand. Using this method they are thinner (which is the result I wanted - my first attempt they were not uniform at all and I was afraid that the thick parts were not cooked). It is wonderful to give to my kids knowing that it is much healthier than regular sausage. Believe it or not, I make this with egg beaters, whole wheat english muffins and 2% cheese and they love it!
