Submitted by: Sally Oh
We (oops, I must say Bob- the kids wouldn't eat mine) always made a big pot of mashed potatoes once a week. The first night it was mashed potatoes. The second time they became this recipe. The third serving was fried potato cakes. Originally submitted to ThanksgivingRecipe.com.

EVEN children love this treat, though sweet potatoes may not be their favorite vegetable. The marshmallow surprise inside delights them. These puffs are fun for a holiday meal and easy to prepare for any number at the table. -Bernice Morris, Marshfield, Missouri

Fall mushrooms give this dish a hearty flavor. Substitute vegetable broth for the chicken broth, and this makes a perfect meal for that vegetarian girlfriend your son is bringing to the holiday dinner. The rest of the family will love it too.

My mom gave me this recipe years ago. Every time I make it, people always request the recipe. It's really good and easy, made with instant potato mix and flavored with cream cheese and onion dip.
