Microwave Meatball Sandwich in Ten Minutes

Working girl here who likes quick and delicious. This meatball sub is made from frozen meatballs and purchased spaghetti sauce and provolone cheese, in the microwave. Total prep and cook time will be less than 10 minutes per sandwich if preparing several sandwiches, and will depend on microwave wattage.

This is a quick recipe my mother made a lot when I was growing up. Ground beef sauteed with onion tomato puree. It has a great flavor! I never make a small batch of this stuff. We have it and freeze the leftovers for the next week.

What can you do with a can of chili, 8 potatoes, an onion, and two pounds of stew meat? Make Mom's Goulash, of course. Since you are using stew meat, three to four hours of slow cooking are required, but otherwise this soup is a snap to make.
