Mom's Creamy Asparagus Spread

By: kpaigel
"This is an easy, delicious spread that adults and kids love. It's a staple at my family's parties, showers, and luncheons. Spread on white sandwich bread or party rolls (or serve with crackers or plain pita chips)."

Original Recipe Yield 24 servings

Ingredients

  • 1 (15 ounce) can asparagus tips, drained
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup finely chopped almonds
  • 3 tablespoons mayonnaise
  • 1 teaspoon finely minced onion

Directions

  1. Mash asparagus in bowl; pour off any remaining liquid. Mix in the cream cheese, almonds, mayonnaise, and onion until thoroughly blended. Cover, and refrigerate until serving.

Footnotes

  • Cook's Notes
  • Use low fat mayonnaise and Neufchatel cream cheese to reduce fat and calories. Splurge on more expensive brands of canned asparagus to get more tips and fewer stems.
