Mom's Corn Bread

"'CORN BREAD just seems to go with chili, especially here in the Southwest, even though Mom's chili is considerably different than the kind that is normally served around here. Mom always made a fresh batch of corn bread when she'd cook up a pot of chili. It just didn't seem right to have one without the other.'"

INGREDIENTS
2 egg, beaten
1 1/4 cups milk
1/4 cup shortening or bacon fat, melted
1 1/2 cups yellow cornmeal
3/4 cup all-purpose flour
2 tablespoons sugar
2 1/4 teaspoons baking powder
1 teaspoon salt

DIRECTIONS
Combine eggs, milk and shortening. Sift together all remaining ingredients and add to egg mixture; stir only until blended. Pour into a greased 8-in. x 8-in. baking pan. Bake at 400 degrees F for 20-25 minutes, or until bread shrinks slightly from sides of the pan and begins to brown on the edges.

This corn bread came out to a great consistency. I used about 1 2/3 cup of cornmeal instead of only 1 and a half. I used margarine instead of lard for health reasons. I used this as the topping for Stove Top Tamale Pie (found on this site) and it worked great. Next time I will add more sugar to the mix (about twice as much- like my grand mom used to make!)

I guess I'm still looking for my ultimate cornbread recipe. This one, while OK, just didn't pack enough corn flavor for me. As my boyfriend said, if you closed your eyes, you couldn't even be sure you were eating cornbread. By the way, the batter makes up very thin, more like a thin pancake batter and needed about ten more minutes in the oven ... and still came out rather pale.

This was a little too grainy for me. It's similar to my Mother's recipe, which isn't sooo grainy. My boyfriend liked it though, which makes it a keeper.
