I made this today, and it was absolutely amazing! I used dried chickpeas and cooked them in the crockpot, drained then mashed them to a chunky consistency. Then I just loosely followed the ingredients list, not really measuring, just as anyone would when making tuna salad. It was fabulous! I had this on Orowheat sandwich thins. This will be heavy in my rotation. I'm a returning, nontraditional college student, and I'm consistently appalled by the lack of healthy choices at school, and I think this would travel well as a lunch. This would also be great used simply for dipping celery sticks. *LOVE* =)
