Disappointed in these muffins enough that I have deleted them from my recipe box. Very odd flavor and a little dry. Followed direction as written.

This is a dynamite recipe! super yummy with all the flavors working together really well with nothing over powering anything. I don't usually like muffins but these were SUPER moist and I can't wait to bake them again :D

What a yummy flavor combination. I put them in mini bundt cakes. The coffee flavor is subtle. My 5 year old loves them!

These are some of the best muffins I've ever had. I also swap out the margarine with 1/4c olive oil and 3/4 C fruit puree and some flax seed. Turns out better and more moist than with using the oil IMO.

These muffins are the best I've ever made! The bananas and chocolate chips are a great combo but the coffee really makes it extra special. Looking forward to making and eating more of these delicious muffins! (I did reduce the sugar to 1 cup and used 1 cup white flour and 1 1/4 cup whole wheat flour). I don't have a food processor, so I mixed all the dry ingredients in 1 bowl. I combined the wet ingredients in another bowl. Mashed the bananas separately and then mixed in with wet ingredients. Finally, stirred the wet into the dry. Be sure not to overmix. Turned out great.

So good! I am sure these were great without my changes but I did try to make them healthier for me. Here is what I did...1/2 cup margarine, 1/2 cup unsweetned applesauce instead of just margarine, 2 eggs whites instead of 1 egg, 3 Tbsps of instant esspresso + 3 Tbsps water (verses instant coffee, I love the taste of coffee!) I omitted the white sugar all together and added 1/2 cup of light brown sugar and 1/2 cup slenda (12 pkgs) THESE WERE SO GOOD!!! WILL MAKE AGAIN AND AGAIN!!!

No doubt about it, these muffins were good, but not anything out of the ordinary. I didn't have enough butter (and don't ever have margarine in the house) so I used 2 sticks of salted butter, and a 1/2 cup natural applesauce. We are coffee buffs in this house and instant coffee is never on hand. So I used 3 tablespoons of our freshly brewed coffee. Again, they were good. Just nothing out of the ordinary. :)

Best banana chocolate chip muffins I ever made or ate! Adjustments: I put half the amount of sugar so 1/4 cup of brown and 1/4 cup of white. I put 1 tsp extra of vanilla (never hurts), more coffee as suggested by many other (3tbsp), only 1/4 cup of margarine and 3/4 cup of applesauce. I would add more chocolate chip next time, maybe by a 1/2 cup. LOVED THEM! They were moist and looked fantastic with a couple of chocolate chip and crushed walnuts on top of each muffin. Do not look elsewhere for a banana chocolate chip recipe! THIS ONE IS IT!
