Delicious!!! I'm not even a big coffee fan but, the coffee flavor really enhances the taste of the chocolate chips. Definitely increase to 3 tbsp's of coffee dissolbed in 3tbsp's of water for best flavor.

This is a really yummy way to use up those ripe bananas instead of your usual banana bread, ESPECIALLY for us coffee lovers! I used 3.5 tablespoons of the instant coffee granules, added chopped pecans, and made with half white sugar and half dark brown sugar. This is like a STarbucks mocha in muffin form! So good with coffee. Everyone wanted the recipe!! I also used once in mini loaf pans. It made 5 little loaves. Just increase your bake time about 15 min or so.

Simply amazing! I did what some of the suggestions said - used 4 teaspoons of instant coffee instead of 3, and I used only three fourths of the butter suggested. YUMMMY!

Very good. The inclusion of the coffee gives the muffins a lovely colour. I added the amount of coffee---one T. didn't give it enough flavour.

followed the advice of others and reduced butter to 1/2 cup and sugar to 3/4 cup. i also did the 3 tbsp instant coffee but wasn't satisfied still with the coffee taste. maybe 4-4 1/2 tbsp would do the trick. careful not to overbake!

This recipe was fantastic. I did follow the suggestions of other reviewers and added 3 Tbsp of instant coffee. The coffee flavor was subtle, but the overall taste was outrageously good. Everyone who tried them loved them! I will definitely make these again! P.S.: The smell in the house while these were baking was divine.

This is the best muffin recipe I have tried in a long time! I use special dark chocolate chips in mine...Yum! I do have to agree though that you cant really taste the mocha as the recipe is written.

Yummy! I used 1/2 cup oil instead of 1 cup margarine, 1/2 cup Splenda instead of sugar, 2 Tbs. instant coffee, sugar-free chocolate chips, and whole wheat flour. Also I filled my 12 muffin cups fuller (instead of making 15-18)...worked fine! Thanks for a wonderful recipe. - Becky

Awesome. I did use 3 TBSP of coffee as recommended. Next time I will cut the amount of margarine in half not because they weren't great with full fat but I try to cut it where I can! Thanks...my other banana muffin recipes are in the trash!

EXCELLENT! Easy to make and very moist. I think the moistness of these muffins is what makes the recipe a favourite of mine. I agree with other reviewers that the coffee must be doubled if you want a truly mocha flavour. I ran out of paper liners mid-way through baking a double batch. The muffins popped out of a sprayed pan with ease. Definitely a keeper!

Well these turned out very moist and not dry at all! I did use 1/2 cup of olive oil in place of the butter,much healthier this way! I also reduced the sugar to 3/4 of a cup and this made them not too sweet just perfect! Not a strong coffee flavour. I will try espresso next time. I did use fresh brewed as to the instant. We dont use that so I didnt have it anyway!Otherwise a great muffin. I also added some pecans, great! Thanks for sharing this great recipe!
