Only thing i did differently was to add an extra TB of instant coffee, even with that change the mocha flavor was subtle. It is a delicious muffin.

I followed the review that used 1 c. applesauce and 1/4 c. oil. Seemed thick, so I added about 1/4 c. milk. After I baked them and we had fallen in love, I realized that I forgot to add sugar!!! As in, I added NO SUGAR!!! I guess the applesauce and choc. chips were sweet enough. The best muffins I've had in ages.

My family enjoyed these muffins. Like some of the other reviewers, I made a few substitutions to make them a bit healthier. I used 1/2 cup butter,and 1/2 cup unsweetened applesauce instead of the 1 cup margarine, I used egg substitute and instead of all of that sugar, I used 1/2 cup brown sugar and 3/4 cup Splenda. I also substituted instant expresso for instant coffee. The muffins were moist but were still too sweet for our tastes, I will cut back more on the sugar/sweetener next time! I think they can use a little more texture, I might add some oatmeal next time!!

Delicious, but FOLLOW OTHER REVIEWS!! I did as recommended using only 1 cup of sugar, 1 cup applesauce and 1/4 c. of oil instead of margarine as well as using 4 tbsp. of coffee instead of one. Turned out wonderfully moist and not too sweet. I can see why some would be disappointed with this recipe as is.

A hit with even my picky eaters who don't usually eat breads and cookies. I did add a bit extra coffee flavor as the others had suggested. Very good.

These muffins were real easy to make and very moist and delicious. I had read some reviews before making it so I doubled the amount of instant coffee to 2 TBS but felt that still wasn't enough. I couldn't tast the coffee flavor at all so next time I make these I might increase to 4 TBS. They still tasted like very yummy banana muffins just not enough coffee flavor if you follow the recipe to the tee.

Until today I have always made these with either strong brewed espresso or strong coffee instead of using the instant coffee granules. Using just coffee, these muffins make an awesome banana chocolate chip muffin, no hint of a mocha taste (we usually use a cream cheese filling - similiar to black bottom cup cakes!). Bought the instant espresso granules at Wal Mart, of all places, and used those tonight. The muffin had a good mocha taste. Not sure which I like better, both ways are really good!

These were great! Used less sugar and chocolate chips and substituted yogurt and oil for the 1 cup butter. Two medium bananas were enough.

These muffins MELT IN YOUR MOUTH! I made them with 1 cup of whole wheat flour and the rest white, and 1/4 brown sugar and the rest white. and they are completely fab! i will SO make these again!

These are good banana muffins, great texture and flavor. I was disappointed that I couldn't really taste the coffee. Like another reviewer did, I used Kaluha (mocha flavor) instead of the water. If I make these again, I think I will increase the coffee to 2 Tbsp. and use the Kaluha. My husband took these to his office and they were a huge hit!

I made these with the help of my daycare children and during the fiasco, I managed to accidentally leave the butter in the microwave. As I was getting out the first batch, I realized this and was very bummed. But guess what? These still turned out marvelous without all that fat! I used 2 Tb coffee with 2Tb water. Next time I make this, I will use some butter, but def not as much as was called for. Yummmm

This is an amazing recipe. My bananas must've been small as my batter was a bit dry, so I had to add 1/4 cup of milk for it to come together (didn't have a 4th banana to mash up). I will definitely make it again! Thanks so much for sharing!!!

These really are wonderful. The flavor is complex and delicious. They freeze well. Nuke two frozen muffins for a minute and they taste oven fresh.

These are fantastic! I used 2 tbsp Maxwell House Orange Capuccino Instant Coffee & 2 tbsp Kahula instead of regular instant coffee and water. Adds an extra zip to these already delicious muffins! My husband says they have a real kick to them!

I loved these! I had a ton of frozen bananas taking up space and needed to use some. I used 4 medium sized bananas and they have great banana flavor. I also subbed applesauce for 1/2 the butter and used half whole wheat flour. A little healthy to counter the sugar and yummy chocolate! The espresso gives these such an interesting flavor I loved it and will DEFINITELY make again!
