We both liked this. What I did a little different----I used more than 2 cups of frozen vegetables, probably about 3 1/2 cups, used 2stalks of celery instead of one, a tad more onion than suggested, used plain fat free yogurt instead of mayo and baked this for close to an hour. The crushed crackers I used were the multi grain Miltons from Costco. It also reheated well in the microwave the next day.

I'd make this recipe again--it is very easy and fast to whip up, and you nearly always have the ingredients handy. Good flavor, although time I'd probably add a little fresh basil for a little more flavor. Also..this casserole actually tasted better the next day! Jobgoddess

my house smelled like thanksgiving! i LOVED it. so did my family. i will add a little more mayo and a lots more cracker crumbs next time, but it was great!

a decent side dish. i didn't have water chestnuts or celery, and i mixed swiss and cheddar cheese, and i used breadcrumbs sans butter instead of cracker crumbs. still pretty good. i think it would be better by the original recipe without changes... will try sometime when i have it all on hand!
