INGREDIENTS
1 1/2 cups all-purpose flour
1 cup packed brown sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup strong brewed coffee, room temperature

DIRECTIONS
In a greased 8-in. square baking dish, combine the flour, brown sugar, cocoa, baking soda and salt. Make a well in the center; add oil, lemon juice and vanilla. Stir just until moistened. Add coffee; stir until batter is smooth.
Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

I was a bit apprehensive that this may not work so with a little trepidation I tried it and it turned out amazingly well thank you very much! Less washing up gets a thumbs up in my cookbook! I iced it with coffee flavoured icing as pictured: Mix 1 1/2 cups confectioners sugar, 1 tablespn each of margarine and brewed strong coffee (more of what was used in the cake mix). Don't be scared now....try this easy cake today!

I made this with my 5 yr old. It was easy and fun.It tasted good too. Since the pan gets a bit messy in the stirring stage it is not great on presenataion but if it is served on to a plate, no one will ever know!
