This version of the colorful and hearty salad is made with black beans, yellow corn, tomatoes, avocado, and Italian salad dressing, and flavored with pickled jalapeno peppers. It's traditional to eat beans or black-eyed peas on New Year's Day for good luck.

Very festive recipe for the holidays or anytime. Rich and wonderful. One of my faves. Don't let the caviar fool you. You can buy at grocery store for under $10.00. (but don't let the guests know!). Serve with flat bread, crackers, or toast points.
