INGREDIENTS
2 cups cubed honeydew
2 cups halved unsweetened strawberries
1 cup sliced banana
1 cup grapefruit sections
1 cup sliced halved peeled kiwifruit
1 cup mandarin oranges
1/2 cup sugar
1/3 cup orange juice
1/3 cup lemon juice
1/8 teaspoon peppermint extract

DIRECTIONS
In a large bowl, combine the fruit. In a small bowl, combine the remaining ingredients. Pour over fruit and gently stir to coat. Cover and refrigerate for at least 3 hours.

I used a mixture of bananas, strawberries, red grapes, and cantalope. I also simmered the sugar, orange and lemon juice with 8 leaves of peppermint from our garden (instead of the extract), and then poured the hot mixture over the fruit and put in the frig. My taste-tester (resident 4 year old!) said he liked the yogurt fruit salad we made last week a little better. Thanks for the post!
