2 1/2 tablespoons lemon juice
1 teaspoon dried mint

1 pound fresh asparagus spears, trimmed
1/4 cup crumbled feta cheese

Directions

In a small bowl, mix together the lemon juice and mint. Set aside.
Bring a large pot of water to a boil. Place the asparagus into the boiling water for about 45 seconds, then remove to a bowl of ice water to stop the cooking process. Drain the asparagus, and place on a serving plate. Drizzle with the lemon mixture, and sprinkle cheese over the top.

I was a little concerned about the very short cooking time, but it turned out perfectly! The asparagus was crisp ans so flavourful and the sauce wasn't too overpowering. I may try it with fresh mint next time (I prefer the taste of fresh). Yum!

Wonderful!! I was eating it off of the serving dish with my fingers! Both my brother and husband, who hate asparagus, were gushing over it. The kids didn't think a whole lot of it, but I didn't expect them to. Thanks so much for this wonderful recipe!!!
