I did this in a small single serving pan (for a small part of a birthday date dessert) and it turned out wonderfully. Beforehand I tried out a few different variants and I have found it is best if you smooth the ice cream in the crust and coat with a thin layer of chocolate and then a fluffy layer of cool whip with a chocolate/chocolate mint crust.

I used mint chocolate chip ice cream and this turned out beautifully. After letting the ice cream soften on the counter for a bit, I just scooped it directly into the pie crust. It's easy to smooth out if you just keep rubbing the top over with the back of a spoon. I melted 3 squares of the chocolate to give it more "drizzle" on top. This was amazing! My dad laughed when I told him I had made an ice cream pie. He said, "Oh you took some ice cream and dumped it in a pie pan." BUT -- when I took the pie out of the freezer, he looked at it and said, "You didn't make that. Where'd you buy that at?" It definitely looks pretty enough to be store-bought!! (And it's a given that it tastes delicious too!)

CHANGES I MADE: Instead of using mint ice cream, I used oreo because more people tend to like it more. Filled the pre-made oreo crust, let it freeze again, then took it out and piped on cool whip. Followed it up with some crushed oreos since I thought it was not only taste better but look better (just my opinion of course) than chocolate drizzled!! Plus it went with the theme of the pie. I gave this 5*'s b/c of the endless possibilities you can use with this simple LAST MINUTE dessert! I love how fast it is, yet you get the praise for it as if you spent all day on it!

this recipe tasted great and was really easy! the only thing i did different was soften the ice cream in the microwave (till almost melted) before putting it in the pie crust, since it refreezes in the freezer. thanks!

This was very good, and obviously very easy. Next time I will make a home-made crust. Also be careful to let the chocolate cool quite a bit, otherwise it will melt the ice cream.
