Mini Southwestern Corn Pup Muffins with Fiesta Dipping Sauce

3/4 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon garlic powder
1 cup milk
1 egg, beaten
2 tablespoons canola oil
1/3 cup shredded Monterey Jack cheese
4 hot dogs, cut into 1 inch pieces
Fiesta Dipping Sauce:
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 tablespoons dry taco seasoning mix

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Coat two 12 cup muffin tins with nonstick cooking spray or line with paper liners.
In a large bowl, stir together the cornmeal, flour, sugar, baking powder, salt, chili powder, cumin and garlic powder. Make a well in the center and pour in the milk, egg and oil. Stir until well blended, then gently stir in the cheese. Drop a smal spoonful of the batter into the bottom of each muffin cup. Place a piece of hot dog on top of this batter. Fill cups with enough additional batter to cover the hot dog pieces.
Bake for 10 to 12 minutes in the preheated oven, or until muffins are lightly browned and spring back when lightly pressed. Cool slightly before removing from the muffin pans. Serve warm with the Fiesta Dipping Sauce.
To make the Fiesta Dipping Sauce, whisk together the sour cream, mayonnaise and taco seasoning mix until smooth. Serve immediately.

Easy and better than corndogs. I added about 1/2 tsp. more garlic powder and 1/2 tsp. cayenne pepper. This was easily made vegetarian with veggie dogs and soymilk.

Very tasty, quick, and easy recipe. Kids and adults love it. I made only one change, I used dry taco seasoning mix instead of chili powder. Only suggestion I have is I made batches with both regular cupcake pans and mini cupcake pans. The regular sized ones came out slightly harder to eat, and stuck heavily to the cupcake wrappers I used. This was quite irritating when trying to eat them. Also, there was almost too much cornbread to hot dog ratio.(cut each dog into 1/4 pieces) On the other hand, the smaller Mini ones I made with my nonstick mini pan, I cooked a few minutes less, in these I used 1/8 of a hotdog pieces, and it worked perfect. They were so yummy, everyone ate these and left the big ones after tasting both. Perfect hotdog-corn mixture ratio. They weren't as floppy as the big ones.Fun to eat! I will definitely make these again, but from now on will use the mini cupcake pans only.

These are a definate make again. DH and I both ate a bunch of them, but the toddler just picked out the hot dog and ate that. So the spices make these suitable for the more "refined" palettes in the household, hahaha. The dipping sauce got bettr and better the longer it sat in the fridge (I think it took sometime for the flavors to meld), so my suggestion would be to make the sauce 1/2 a day before the muffins and let it sit (covered) in the fridge until serving time. -Diana

Love, Love, LOVE THESE! I made a batch (mine made 48 mini muffins) took half to a party where they were gobbled up, and sent half (a few at a time) with my son's lunch to school. This was a great shake up from sandwiches and even just plain hot dogs. My husband loves these for a midnight snack as well. These are the BEST!! Thank you for this fabulous recipe!

These were really good! I used cajun seasoning instead of chili powder and I also forgot the cheese (again), but they were still very good. I doubled the batch, good thing too, my kids had 3 each! The sauce is great too and could be used for a lot of different things. Thanks for a great recipe! I will make this again and try not to forget the cheese! LOL

I would give this recipe 5 stars...my husband and I loved it. However, my kids didn't like the spiciness of the muffins. Instead, they tore them apart looking for the hot dogs. We used veggie dogs in place of the regular hot dogs. I didn't even bother with the sauce. It was nice change from the same old stuff.

I cheated and used a Jiffy Mix instead but with same results. The kids went crazy for these! All were gone as soon as they left the oven! Great lunch for little ones to help make....my son called these Corny Puppies!

This recipe could have been better. First, either the recipe was off or my ingredients were. I followed the recipe exactly and was only able to make one tray of 12 muffins with the batter and I only had a couple of hot dog pieces left over. The cornbread was tasty, but I felt like there was way too much cornbread for the amount of hot dog in the middle. My husband ended up peeling half the cornbread off to get to the hot dog. If I were to make this recipe again, I would use as big of a piece of hot dog as I could fit in the muffin well, and I would probably lay the hot dog piece sideways to fill more of the muffin. I probably won't bother to make again because there just wasn't enough "corn dog" in these corn muffins.

I imagine these just wern't our taste, although I thought they would be. I didn't care for the dipping sauce at all, and I love dips. I think it was the mayo. Maybe use all sour cream? Honestly, if my kids loved them, I would have rated them highter (being a kid pleaser recipe and all) but they love regular corn muffins but only ate half of one of these and picked out the hot dog and left the rest of the muffin. Sorry I coudn't be more positive--we just did not like them.
