INGREDIENTS
1/2 cup butter or margarine, softened
1 (3 ounce) package cream cheese, softened
1 cup all-purpose flour
1 cup shredded Monterey Jack cheese
1 (4 ounce) can chopped green chilies, drained
2 eggs
1/2 cup whipping cream
1/4 teaspoon salt
1/8 teaspoon pepper

DIRECTIONS
In a small mixing bowl, cream butter and cream cheese. Add flour; beat until well blended. Shape into 24 balls; cover and refrigerate for 1 hour. Press balls onto the bottom and up the sides of greased miniature muffin cups. Sprinkle a rounded teaspoonful of cheese and 1/2 teaspoon of chilies into each shell.
In a bowl, beat eggs, cream, salt and pepper. Spoon into shells. Bake at 350 degrees F for 30-35 minutes or until golden brown. Let stand for 5 minutes before serving. Refrigerate leftovers.

I give this recipe 5 stars because this is exactly what I was looking for-a cute, bite-sized quiche. It was a little bland for me, even after adding hot sauce, but as other reviewers suggested, you can add whatever you like. Since it is a tad labor-intensive, I tweeked the technique. Portion out the dough right into a 24-count mini-muffin tin so you can adjust to make them all equal. After rolling into balls and cooling, smash each ball with a shot glass dipped in flour. This forms each ball into a perfect tart. Much easier than using your fingers.

These are great for any party and freeze extremely well! I added some browned, crumbled spicy sausage which really boosted the flavor. Delicious!!

These are really good, but I think they taste more like a breakfast food. I did add the spicy meat like others suggested. I think you would be able to make more than 24 of these. You need to make sure your "dough cups" are pretty deep so the egg mixture does not over flow. I was afraid I would not have enough room when adding the egg mixture so I mixed the green chilis in the egg mixture. Like I said, these were very good but I think would be best served for breakfast or brunch. Oh... and I was also confused by how much cream cheese to use. It says 1 package, but then says 3 oz so I used 1/2 of a block of cream cheese so that would be 4 oz. I don't know if that was the right amount, but turned out fine.

While this is a great recipe it is not really made in a mini muffin tin; With these recipe guidelines it fits better into a regular muffin tin.

I made these today for my daughter's wedding shower, since it was cinco de Mayo. I didn't make any changes, and everyone said "you made these?" Served with Amy's cilantro cream sauce, a great combo

These are delish! I took the advice of several ahead of me...added hot italian turkey sausage (meat from 4 links)...sauteed that the day before w/ some green pepper in place of the chiles. Also..added about 1/4 c parmasean and some coarse ground black pepper to the dough - made the balls the day ahead and refrig overnight. Made 12 in full size muffin pans (instead of 24 minis) sprayed w/ PAM...used the shot glass idea dipped in flour to shape dough into muffin pans - was a great idea! Added 10 mins to bake time since using larger size. Added 2 eggs to filling (so 4 eggs total. They were really good. Will definately do again...trying variety of fillings.

I couldn't help but notice that the prep time calls for 20 minutes. This would be correct if you already had dough balls in the frig waiting to be used. There is prep and then 1 hour of chilling the dough, plus the cooking. I'm glad I doubled checked the instructions and didn't base my timeline on the 50 minute estimate. I hope they turn out great.

Absolutely sensational! My party friends loved it! I added sausage...it gave it a nice extra flavor that my husband loved. I will keep this recipe for life! The only down fall is that it's a little time consuming...but well worth it!

i made these for a party and they looked and tasted great. i agree that they need a little extra flavoring (maybe cayenne pepper?), but this is a great recipe overall.
