I don't like nutmeg so I replaced it with a tbsp of a cinnamon & sugar mix that I mixed in the blender before putting it in the recipe & also added pureed carrots to the batter, my son loves it:)

I made these exactly as written and these are delicious! I agree that there was too much melted butter. I only used about 4T and still had most left over. My "puffs" ended up more like muffins due to rising over the top of the tin so I only dipped the tops in butter/ sugar. I filled them 2/3 full and got about 20 mini muffins. Mmmmm.... Oh, forgot to add that after 15 minutes I checked them and they were done, a little brown around the edges.

Just as the submitter states, these definitely are delicious bite-size treats and you might be tempted as I was to nibble on them on ALL DAY! So, here's another recipe that my husband just loved. But, I guess that's no surprise because he loved "Donut Muffins" by Dianne from this site. This recipe is slightly different because it contains an egg which is why I had to try it to see if that made much of a diffrence. It really didn't. These are just as light, fluffy, and delicious. The main difference is the amount of nutmeg which is significantly less (1/2 tsp. less). So, because I happen to like spices I used 1/2 tsp. of nutmeg in these plus 1/2 tsp. of vanilla. Whatever you add it's a matter of personal preference in the end and what you end up with is a very light, moist, irresistable little treat that's sure to please.

Light and fluffy, delicately spiced with just the slightest hint of nutmeg. Barely sweet, which makes these a perfect little breakfast cake. These do not absorb the melted butter, so you get just a light coating of the cinnamon sugar without changing the texture of the puff. Other than adding a half teaspoon of vanilla I followed the recipe as directed. I enjoyed these very much, particularly *because* they are delicate and fluffy, not heavily spiced, and not overly buttery. Be forewarned, however, that rather than 15 I got 24 of these, and that was filling the mini-muffin cups generously. (Please note that this exact recipe appears by several different names on this site...)

THESE ARE TO DIE FOR!!! I only had one problem-too much melted butter. I put the reccomended amount in the microwave and it was too much. Thanks for this recipe!!!It was AWESOME!!!
