These are great. I have made them with Oreo cookies on the bottom and crushed oreos or mini chocolate chips in the batter. I have used a whole Oreo or one split in half with the frosting side up. The key is not too bake too long or they will not be as moist. I am going to try making mini pumpkin cheese cakes for Thanksgiving. The size is great, just big enough and portable for guests at parties.

these are amazing little things to just have around the house my family loves them you can just grab one when you walk be and pop it in your mouth all i do differant is add a splash a vanilla. AMAZING!

These were very easy and yummy. Instead of using vanilla wafer crumbs, I used the mini vanilla wafers. One whole mini vanilla wafer is the perfect size for the bottom of a mini muffin tin. Much easier and faster then messing with crumbs.

I made a white chocolate version of this recipe. I melted 3/4 cup of white chocolate chips with a splash of milk over a double boiler and then added them to the cream cheese mixture and they were so yummy! oh ya and i also halved the recipe... i don't have enough people to eat 48 of these guys!

A truly quick recipe that is sure to please everyone! For those who want to use a regular size cupcake pan, I followed the recipe exactly and it made 18 cupcakes. I lined the pans with foil liners and peeled them off after they had cooled a bit. They looked great. Also used the Famous Chocolate Wafers for the crust with 1/4 butter and 1 quart strawberries with 1/2 c. sugar, allowing them to sit at room temp. for the afternoon. Delicous!

Wonderful, easy recipe! I used crushed Oreo cookies for the crust the second time I made these and it made all the difference! Highly recommend this one...it's a keeper!

A great starting point for as many variations as you can think of! I don't crush the wafers; instead I place two in the bottom. It's less messy and saves time. Just remember to tap out any air bubbles. Also, ALWAYS use the foil liners! Otherwise you'll end up with more cheesecake on the liner than in your mouth :)

I made the portion for 24 servings and it fit PERFECTLY into a 12 hole regular sized muffin pan. I used 1 Tbsp of the crushed wafers on the bottom of the muffin instead of 1/2 Tbsp, however I have seen suggestions saying to use the entire cookie flat side down! The recipe also calls for a cooking time of 15 minutes, however it completely passed my mind that since the portions are larger, I should extend the time. I kept mine in for 20min thinking they would look less uncooked when they settled, but I think 30 minutes would've done the job. The flavor was good overall but I will add more cheese next time, was a little too sweet for me.

This recipe is wonderful! I used a few of the variations that I read in other reviews: ****** Peanut Butter - 1/4 of the batch of cheesecake batter, 2 tbs peanut butter, added three peanut butter chips to the top after I pulled them from the oven but while they were still hot, and drizzled melt chocolate on top after cooled ****** Almond - 1/4 batter - 1/2 teas almond extract in batter, 1/2 teas almond extract on some cherry pie filling, bake and when cool add cherries to the top ****** Chocolate - 1/4 cheesecake batter, I did not measure the cocoa powder or the melted chocolate (melted chips in the microwave) but added it little by little until batter had a nice medium brown color, drizzled white chocolate and milk choclate on top after cooled. ****** Chocolate Chip - I just took the regular batter and after I filled the muffin pan I added some mini choclate chips on top and baked ****** I did use a graham cracker crust for all of them (2 cups graham cracker crumbs, 8 tbl melted butter, 8 tbl sugar and mix) but next time I am going to try a oreo crust on the peanut butter and the choclate ones. ****** They did stick alittle to the paper liners so I will try tin foil type liners next time so I can remove the liners for presentation. I am also excited to try and make a turtle cheesecake type next round! Thanks for the wonderful recipe! It was a major hit in the office!

These mini cheesecakes are soooo good and soooo simple to make. I made them for a bakesale and they looked better than anything else on the table. This is a 5 star recipe. I followed it exactly and they came out perfect. Nothing needs to be changed! I will be be making these again anytime I need to bring a desert! And now I'm craving them after writing this review :)

Instead of crumbling wafers, I spooned boxed graham cracker crumbs onto the bottom of each muffin liner and was surprised to find that they baked pretty well. These sunk down in the middle after removing from the oven (see cheesecake baking tips) the first few times I made this recipe, but I've gotten a little better and the dips aren't as severe anymore. Anyhow, the cherries fill up the holes pretty well. =)
