This was delicious and the perfect portion for two people. Apples were the perfect consistency. Was worried they would be mushy cooking ahead of time on the stove, then baking in the oven; but they turned out perfect. Added a little dried tapicoa to the filling just before pouring into pie crust like I always do to my apple pies just to make sure the filling wasn't too soupy. Served with vanilla ice cream and caramel sauce. Will definitely be making this again!
