Lots of fresh vegetables and elbow macaroni in a hearty chicken stock are the stars of this standard minestrone. The recipe calls for only minced garlic, dried parsley, and salt for seasoning -- great when you are using really fresh and flavorful produce

Italian Riboletta Soup

Riboletta, roughly translated in Italian, means re-boiled minestrone soup with bread slices in it. This is an excellent version, brimming with vegetables, and baked for the final 30 minutes of cooking with parmesan toasts nestled on top.
