I made this tonight for dinner. I left out the plum tomatoes only because I forgot to pick them up. I added some italian sausage. It came out very good! I didn't have any vegetable stock, but had a ham bone from a ham I just recently made. It gave the soup a great flavor :) Thanks for sharing!!

This was a decient soup, I changed the amount of garlic to 3 large cloves, and less oil. I did not add the cheese. Next time I'll not add the potates, and I will add some beans, maybe black beans for more color and protein. My husband and youngest son thought I lost my mind and were wondering where the "meat" was. My eldest son didnt like the potatoes. I had went a bit crazy at the Farmer's Market and this was a good way to use what I picked up! Will make again.

This one is a keeper. You can't go wrong with this soup. The recipe if followed as is will be perfect. It has proven to be very versatile as we have made it with whatever ingrediants we've had on hand.

My family LOVED this soup, including my six-year old son! I made a couple of changes to use what I already had: organic turkey stock, no potatoes, no salt (turkey stock already salted), butternut squash, and half of the spinach, orzo pasta, and Parmesan cheese. This soup will be a regular at our house. I've also already passed the recipe onto several friends.

Yum! I left out the potatoes and spinach and added more chard. Super yummy thought as left overs I had to add water to thin it out. The pasta absorbed most of the liquid. Great basic recipe. Thumbs up.

This was so awesome! I substituted kale for the swiss chard and used the brands of my choice for the ingredients. We will be eating this more often!
