Wow! These are great! I followed the recipe all the way exept I didn't have strawberries so subed it w/ 1/4cup of cranberries & 1/4 pecans. The muffins were sweet, light and moist! What a great healthy muffin recipe, you wouldn't even know it!

I was looking for a recipe that had whole wheat flour, so I used this as a base since I didn't have strawberries..... I plused 2pkgs 0f simmple harvest vanilla,honey,almond ceral, set aside...pulse 4sm bananas & 1 white peach...in lg bowl whisked 3/4c applesauce (instead of oil), 1/2 c brn sugar, 2 eggs, vanilla, cinnamon, 1/2tsp salt folded in banana peach mixed in 1c ap flour, 1c whole wheat flour, baking powder & ceral...spooned in 12 reg muffin tin to the top....baked @ 400 for 5min & then @375 for 15mins. Lightly sprinkle pwd sugar on top before cool. Very Good! Next time I'll add more peach or oranges & carnberries instead.

Great Recipe! I altered just a bit for added good health. Added 2 tblsp ground flax seed meal, 1/4 cup quinoa flakes, and 1/4 cup oats (or oat bran works). Added a 1/4 cup extra applesauce due to additional dry ingredients. Reduced brown sugar to 1/2 cup and added 1 tblsp plus 1 tsp Stevia powder. Very moist and sweet, so could reduce sugar more. Made with strawberries the first time and they were delicious. Making with blueberries today - can't wait to try them.

Really good and healthy recipe. Used blueberries instead of strawberries. Might make again. I cut the sugar down but might bring it back up to noted amounts next time.

Great healthy breakfast on the run. I made a batch and froze them, defrost and microwave whenever I need a quick breakfast. Not too sweet, just perfect for a healthy morning treat.

Awesome muffins! So much lighter in texture and just enough moisture (I used large bananas)than store-bought muffins. I thought I had frozen strawberries on hand, but I actually had "berry medley"--blueberry, raspberry and blackberry mixture, which worked wonderfully. I used 2 teaspoons of cinnamon instead of a tablespoon, and it was just right. I made no other substitutions. The batter made 8 muffins instead of twelve, but that is fine for the four of us. I had never tried this muffin before at Mimi's---I'm a Buttermilk Spice Muffin fan----but I don't need to, now that I have this great recipe! Thanks for posting, MIMI128!

the addition of the oats (1/2 cup)makes a less soggy muffin. I have made it with and without and prefer with for sure! I like to add a heavy sprinkle of ground flax to the recipe. Have made using strawberries and blueberries - both came out yummy!

This recipe was delicious. I substituted more applesauce for the vegetable oil and doubled the cinnamon. I would definitely reccommend using fresh strawberries. The last few muffins went bad because the strawberries made them a little more soggy even though they remained frozen until they were baked.

Some changes I made make these delicious AND very healthy: like other reviewers, I substitued nonfat plain yogurt for applesauce and applesauce for vegetable oil. I also just added 3 egg whites instead of 2 whole eggs, splenda in lieu of brown sugar. I doubled the cinnamon, added a splash of nutmeg and added 1 teaspoon of baking powder. I also added about 1 cup of chopped walnuts, used frozen strawberries, 2 large mashed bananas. These were DELICIOUS and so nutritious! I highly recommend trying it!

These muffins are AWESOME!!! they are my new favorite breakfast!! I made a couple changes: I used 1/2 cup of brown sugar and 1/4 cup of splenda, 1 cup white flour and 1 cup wheat flour and 1/2 tsp salt and i used fresh strawberries.....and they came out absolutely delicious!! They are sweet and very moist and highly addictive!

These are really good, a definite keeper! I followed the advice of other posters, adding allspice and fresh strawberries, but subbed oat bran for the 1/2 cup wheat germ, since that's what I had on hand. The finished product flew off the cooling rack, especially after my 17yo DS tried them spread with strawberry cream cheese!

These were really good! I hate making changes to recipies, but I did. Used canola oil instead of vege. Used 1 1/2c ww flour with 1/2c wheat germ. Decreased cinn to 1T and 1/2c PB sugar. Fresh strawberrys work well for us!

Wow, delicious! Used 1 cup whole wheat and 1 cup regular flour and reduced sugar to 1/2 cup as they were for my 1 and 3 year olds. Used fresh strawberries that I had frozen and they were so sweet! Will definately make again!

These are very tasty! The only thing I did differently was to add 2 T ground flax meal, and I had to use all oil (went a little short) because I ran out of applesauce. Also, I did mush up the fresh strawberries that I used. The one thing these are missing is a little salt. Maybe that's what the applesauce would have done to help resolve that issue. These will be great to add to our morning rotation of breads for coffee!
