My family loved this. It was my 1st time to make enchiladas and this recipe was perfect. So easy to make. My boyfriend said it was resturant quality. I added milk to the topping sause and I think some green canned chilis would of made this dish perfect. But all in all I loved it and will make this in the future!

I added a can of diced tomatoes with chiles, and a small can of green chiles to the chicken and cheese mixture. I pured green taco sauce over the enchiladas, then put the cheese on top, and topped with sour cream, tomatoes, and black olives after I took them out of the oven.

I kicked it up a notch with a can of Rotel. I'll make these again for sure! Thanks for a great, easy recipe!

This was OK. Way too cheesy - I thought I'd never say that. It was very plain and boring.

I know the recipe is for "mild" enchiladas but these were way too bland for our tastes.

OK, I really liked this... but of course I had to change it a bit. I was missing some of the ingredients and I was doubling the recipe so here is what I did... cooked the chicken in slow cooker in broth overnight, so it was REALLY tender and shredded it. Awesome start. Then I took the onion, chicken, and a packet of taco seasoning and cooked that per directions on the packet. I mixed that filling with some cheese and put it in the middle of the tortillas. I stuffed them really full because I had a lot of chicken! Then mixed the sauce per the recipe but I didn't have enough sour cream so I put some heavy cream to make it stretch. I also didn't have enough cheddar cheese. But it turned out GREAT anyway! Made for friends and they LOVED it.

After looking at other reviews I put a small amount (1/2 packet) of taco seasoning in the chicken (which was leftover from a whole chicken I made in the crock pot) and used a can of enchilada sauce. Hubby LOVED it! Served it with tomatoes, sour cream, lettuce and jalepenos. Ole!

These were quite bland and I'm not a spicy food lover by any means. The cheese sauce on top was too thick and cheesy. I will not be making this one again.

This recipe was quick and easy. I grilled my chicken however and shredded it and it was soooo good and seemed more appropriate for enchiladas. I'll definately be using it again, maybe adding in a few changes.

This was a very good recipe, especially for those who don't like spicy. We added salsa to it, and next time I make, I'll add taco seasoning to the chicken and skip the salsa. My 11 year old didn't even realize that there were onions in it due to all the cheese. I also added more sour cream than was called for to make it creamier.

I enjoyed this recipe, and it was very easy to make. My boyfriend found it bland, though. I'll have to come up with a way to spice it up for him, but leaving half of it mild enough so that I'll eat it!

I made this for dinner tonight because I was craving chicken enchiladas, and they were absolutely delicious! Just the comfort food I was looking for. I did add diced green chiles and crushed red pepper to the mix, and I poured red enchilada sauce on top of the tortillas before the cheese mixture. I also used a pre roasted rotisserie chicken to shorten the prep time. My husband and I really enjoyed this dish, and I will definitely make it again soon! Thank you!

These are so good. All I noticed was the sauce is a little thick so I used a little evaporated milk to thin it and keep it having that smooth texture you can't get with milk.

I picked this with the hope that my kids would like it. 50% success! I poached and shredded the chicken, and only used about 3/4C of Mexican Cheese mix in the chicken/Sr. Cream stuffing. Then, rather than the suggested sauce, I used a mild Enchilada sauce and the remaining cheese (2C total) on the top. Not spicy, but very nice!
