A very easy-to-make recipe. I liked it but found it to be missing something. When I reheated it the following morning, I topped it with salsa and that did the trick. My dad asked for the recipe and has visions of all the things he can add to it b/c it has such a good base.

A very good recipe with a lot of possibilities. The first time I made this I made it exactly as stated and loved it. The next time I made it I cut back on the zucchini a little and added extra onion and jalapeno as well as red pepper, tomato, corn and shredded chicken. I thought some black beans may be good as well but didn't have any on hand-will definitely give that a try next time!

Awesome dish! Made it a few times. Spice it up a little and leave the jalapeno seeds in. Also add a fresh tomato.

Loved this, and what's better, the kids loved it, too. Of course I altered the recipe, so here's what worked for me: I doubled the veggies, and added milk to the mix to help it stretch to cover all those veggies. I didn't measure, but I probably added 1/4 C milk. I used both zucchini and yellow squash. I chopped the zucchini, squash, and onion coarsely, as if I were doing a stir fry. It turned out a bit like a quiche, only with more veggie than quiche, if that makes sense. This one is a keeper for me. I'll definitely make it again.

A delightful side or, in larger portions, main dish. I never remember to pick up jalapenos, so I season to taste with pepper flakes or ground red pepper -- it works just fine. I've made this two different ways: the firs time, I julienned the zucchini by hand. The second time, I shredded it with a grater. Texturally, I preferred the julienned version, but both were very, very good.

So good! It has a good bit of bite to it, but it is still amazing. The jalapeno is mellowed out by the rest of the ingredients. I added extra zucchini, baking mix, and egg to flesh it out a bit. Wonderful flavor, delightfully simple.

We love this! The mixture seemed a little too moist, so I added extra Bisquick. (I have never made it without adding extra, so I don't have anything to compare it to.) I also served it with sour cream and that was a great touch!

I was not sure I wanted to try this but thought 'what to heck, lets go with it'. I watched my hubby as the fork went to his mouth with the first bite of the zucchini and I was surprized. I was so sure that he would not like it, but his words were "this is really good, honey. Add this one to your list as a keeper". What a relief, whew! It's really hard trying to find recipes that charm my hubby. I'm personally not a pepper lover, but the hubby is and that is why I decided to use this recipe. I did however follow other reviewers on slicing the squash rather than shredding it and salted it to sweat it out a little and it turned out fine. I gave it a 4 as it was my hubbies choice and he loved it.
