This is a great quick 1-dish meal. I usually only make it with two chops, enough for dinner for two, and then use the left over rice mixture for lunches. I used diced tomatoes and a bit of left over tomato sauce instead of soup last time and it gave it a fresher tomato taste.

This is a great recipe and so easy to prepare. I did make a few changes: I didn't use onions (husband doesn't care for them), used black beans instead of the kidney beans; pre-cooked organic long grain rice instead of using white rice; used garlic and onion powder and course ground pepper. I will omit the oregano the next time I prepare this. I recommend this for a quick, easy and delicious dinner!

this was really good. i didn't use instant rice, i just started rice on the stove and when i came to the part of the recipe that said boil everything and then put in the oven, i added the rice i was cooking. i omitted the water in the recipe as well. added garlic and cayenne pepper. YUMMY

I made this with brown basmati rice, partially cooking before adding. It was easy, quick and tasty. A good way to do pork chops if you don't like them dry.

This was very good. The rice had the best flavor. The only thing that I changed was instead of kidney beans I used 1 can of ranch style beans.

I made this last night, and it was a HUGE hit, even with the kids! I added some minced garlic with the onions to brown. Aside from that, I followed the recipe exactly. Super easy, and great with corn bread muffins!! Will make again and again.

This was FANTASTIC, the pork was so tender and the flavor of the rice was excellent. I do have to say, I did bake it for an extra 20 minutes (by accident, OPPS) and the rice turned a little brown on the bottom but for some reason it gave it an awsome smokey flavor! one our family favorites now!
