This was good, but the flavor wasn't everything I expected. I had to do some alterations because I didn't have everything on hand. I omitted the green, red and jalapeno peppers. I used a can of tomato paste and 1/3 of a can tomato sauce in place of the puree. I also used 1 cup of chicken broth in place of the bouillon granules and water. I added taco seasoning in order to get more flavor as well as added 1 can of corn for more veggies. Also, mexican cheese mix in combination with cheddar cheese was more flavorful. In the end, it turned out pretty good, but had to add a lot of seasoning to get it there.

Very Good! No green pepper on hand so used frozen red pepper. Used sliced jalapeños from a jar, substituted tomato sauce, crushed bouillon cube and black beans, but otherwise followed the recipe. A really satisfying meal! Will try this next time I have left over rotisserie chicken (from Costco) and rice. Relatively easy!!

Very, very tasty! Left out the Jalapenos because I've got small kids. Takes longer to make than advertised because there's a lot of veggie chopping and you have to cook chicken and rice to go in it. This is a keeper recipe!

I didn't think it was as great as the reviews here. My tastes might go toward adding more spices. There's a lot of cheese in this too.

Not bad. I couldn't have it as spicy as I would have liked, as I didn't have a jalapeno on hand. I left out the beans, added more garlic, and used a Mexican blend cheese. I wouldn't call this a stir-fry, but it was still tasty. Thanks Becky.

Very good. My kids, husband and I all enjoyed it. I made it almost as it, only using black beans and omitting the cayenne and jalapeno.

This was super good. I added a can of corn to the recipe. My boyfriend never takes left overs to work and he made sure he had this in his lunch the next day.

I made this tonight and there were NO LEFTOVERS!! I fed 3 people and I increased the recipe for 6 people. The only changes I made were.. I cut the peppers and onions in chunks more like I would in stir fry. I used pinto and red beans because I prefer them over kidney beans. They were PERFECT in this recipe!!And instead of "adding" the rice, I just served it "over" the rice. I had all of the ingrediants on hand so this was a very cheap, easy and delicious meal!!! I only gave it 4 stars because I wouldnt consider it one of our favorites...but thats just the way I rate recipes. It was definately good and worth trying!! It would be great for an after work quick meal on a cold winter night! Thanks so much for the recipe!! I will definately cook it again!! You could also serve this with Jalapeno cornbread or a side salad.

I made this as suggested, except I omitted the bell peppers as I don't care for them. I added about half a cup of frozen corn. It was very good, although very spicy, which meant my boyfriend wouldn't eat it - so I made another batch for him, omitting the spices and bell peppers, and as I had run out of chicken, I crumbled a hamburger patty into his. All in all, a great way to use up leftovers, but I wouldn't go out of my way to make it.
