This was super good. I added a can of corn to the recipe. My boyfriend never takes left overs to work and he made sure he had this in his lunch the next day.

I made this tonight and there were NO LEFTOVERS!! I fed 3 people and I increased the recipe for 6 people. The only changes I made were.. I cut the peppers and onions in chunks more like I would in stir fry. I used pinto and red beans because I prefer them over kidney beans. They were PERFECT in this recipe!!And instead of "adding" the rice, I just served it "over" the rice. I had all of the ingrediants on hand so this was a very cheap, easy and delicious meal!!! I only gave it 4 stars because I wouldnt consider it one of our favorites...but thats just the way I rate recipes. It was definately good and worth trying!! It would be great for an after work quick meal on a cold winter night! Thanks so much for the recipe!! I will definately cook it again!! You could also serve this with Jalapeno cornbread or a side salad.

I made this as suggested, except I omitted the bell peppers as I don't care for them. I added about half a cup of frozen corn. It was very good, although very spicy, which meant my boyfriend wouldn't eat it - so I made another batch for him, omitting the spices and bell peppers, and as I had run out of chicken, I crumbled a hamburger patty into his. All in all, a great way to use up leftovers, but I wouldn't go out of my way to make it.

Everybody in my house liked it! I added corn and used black beans instead of the kidney beans. I'm also gonna add a little more spice and use a little less water but I will definitely make it again.

I changed a few things here and there, based on personal preference of how many veggies and I'm not a big bean fan, so I omitted the beans... but even with the changes, this was an amazing recipe. The combination of flavors is delicious! I will definitely make this again.

I was skeptical when I saw the title of this recipe but then I noticed that it was from San Jose and it all made sense then. This stuff really is awesome. I've left out the chicken to make it vegetarian and it has turned out beautifully as well.

Very tasty! Used a teaspoon of chili paste instead of jalepeno pepper, and I blended a 14oz can of stewed tomatoes to make the paste. I put in the whole can in place of the water. Will definately make this again. I might try adding some frozen corn to add more variety to the flavor.

I modified this slighty to make a side rice dish (so I didn't add any meat). I added a packet of cheese from a Kraft dinner. It turned out awesome!
