I layered black beans (can rinsed and drained) and the cheese on top of the corn before the corn muffin. I only used 1 box of corn muffin mix, but 2 are definitely needed for full coverage (if I had another box at home I would have mixed it up--instead I just had corn muffin "blobs" covering the cheese). I also dumped the whole can of tomatoes in (juice and all) and think I should have used less than 3/4 cup water with doing that, since it took forever to evaporate, and I still had some runny casserole in the end. Tasted great, though!

This is really good! I added cheese underneath the cornbread mixture and actually added some cheese into the cornbread since we really like it. Regardless, this is a great recipe that my husband and I both love!

Very tasty. I added some green pepper, a can of drained black beans, used chili diced tomatoes, frozen corn, and homemade cornbread. Easy and delicious. Thanks!

What a great recipe! I took some ideas from other reviewers and added black beans and mixed some cheese in with the cornbread mix. It came out great! This one is definitely a keeper.

I am forever trying to find recipes that are an unusual twist on some standard/classic recipes so this one piqued my interest. I made it to recipe and everyone really liked it. I liked it but thought it was quite salty so not sure how I will remedy but I will figure it out. Maybe, I will create my own taco seasoning instead of using a recipe from allrecipes.com. Either way, I will make this again. The saltiness may be a small negative but the tastiness of the recipe would override that.

This is soooooo good. When I was telling my husband what we were having for supper he didnt think it sounded good but when he ate it he told me I needed to give it 5 stars he loved it. I did add black beans and cheese. Thank you.

this is an awesome recipe! definitely company worthy. must be done in a 9x13 or the cornbread top will not cook. first time i tried it in a deep dish pie pan so it would look a little less rustic and the thing just would NOT cook. 9X13 pan never fails though. excellent taste, excellent idea!

This was yummy! I doubled the corn bread mix but maybe next time will stick with the one box. We love cornbread but even after 30 minutes it wasn't cooked all the way thru. I used meat, onions, rotele, a bit of leftover salsa, taco seasoning and corn all mixed together with a layer of cheese on top...then the corn bread mix with olives stirred in. Very filling and tasty! :-)

This sounds like my fast version of tamale pie. Chili with either corn muffins or tea biscuits on top. I will try this recipe out and see what its like.

Great dish !!!! I added a can of black beans and it was all gone. Next time i will cut the water in half though as it took a while to boil down. Don't leave out the olives - a great addition!

My husband would eat it every night. He likes it best when 2 packets of sweet corn bread mix it used. I add red kidney beans in it tonight so we will see if that adds to it. I also used rotel instead of diced tomatoes.

I liked the other reviewer's suggestion of adding beans so I added 2 cups cooked Trader Joe's 17 bean mix to the recipe. Italian style diced tomatoes work well in this dish, too.

This recipe is a new favorite in my home. We omit the olives (neither of us like olives) but it's otherwise perfect as is. It's a nice twist on a classic meal. Love it!

Very good and very easy!! I added 1 1/2 tsps. of sugar to the corn mix to make it a bit sweeter, like cornbread. My husband loved it!! I'll probably try putting another half box of corn mix next time. Great with sour cream and some salad. Thank you!!!
