This salad couldn't be easier to make; everything - lettuce, tomatoes, cheese, and beans - goes into one bowl and is tossed with a ready-made Catalina salad dressing and tortilla chips.

This is a layered salad that begins with a batch of green chili cornbread placed in the bottom of a bowl. Next come the other goodies - beans, peppers, corn, bacon bits, tomatoes, cheese and dressing. When you run out of layers, pop into the fridge to chill.

All the veggies in this salad - fresh corn, peppers, zucchini and onions - are chopped or diced, so the consistency is very much like salsa. Everything is sauteed in butter and then chilled, until ready to spoon onto a salad or into a warm tortilla with a dollop of sour cream.
