We had Mexican night Saturday and this was one of our recipes. Even though I had to make a few minor changes, it came out just like our favorite Mexican restaurant. I used garlic powder instead of garlic salt and added half a cup of diced green pepper I needed to use up. I didn't have any tomato sauce so I used a can of diced tomatoes and all the juice. We all enjoyed it.

Like out of a good Mexican restaurant. This is easy and makes a great accompaniment to just about any main dish. I like to serve it with Cilantro-Lime Chicken.

Yum. Nice side dish with Mexican meals, I mix it with Mexican seasoned beef or chicken and top a Taco Salad.

I make this often. There's a lot of flavor and the rice comes out perfect each time. Try it with the One Pot Pinto Beans on this site.

This was excellent- my family raved about it! I usually use a packet of rice with seasoning mix- but I am trying really hard to cut out the 'prepared' foods in our life. So I made this. Definitely a keeper!!

Just made this today with quesadillas for lunch and my family liked it so much that they requested that I make it every day. I have often bought the little packets of convenience mexican & taco rice because I hadn't found a good recipe to make from scratch.... my family all agreed that this rice was better than any of the others. (My kids actually said they would rate it higher than 5 star if they could)

I added a little Taco seasoning to it (another recipe that some suggested) & some Jane's krazy mixed-up salt. I also sauteed the onions first.

This was very easy to make! I followed the suggestion of one reviewer and sauteed the rice until golden and added the onion and spices instead of worrying about whether the rice was puffed or not. The liquid evaporated much quicker than I anticipated, so I added extra liquid. It all does work out in the end!

This was super easy and delicious. I didn't have long grain rice on hand, so I used the Bulk Short Grain rice we have. I cooked it in our rice cooker and then threw in the tomato sauce (used left over spaghetti sauce), taco seasoning (we didn't have just cumin), only 1/4 c. broth and the cooked rice together in a skillet; it was delicious! This will be a favorite pick for fast, easy and delicious recipes at our household.

We really loved this dish! I didn't have any cumin on hand, so I just used taco seasoning, as suggested by another reviewer. I used 1 1/2 tsp., but I think next time I'll use a little more. I omitted the garlic salt and just used 1/2 tsp. garlic powder and no salt b/c of the taco seasoning. I made this to go with tacos, but I think it would be great w/ chicken as well. I will definately be making this again! Thanks for posting. :)

Terrific! I did not have garlic salt, so I used 1 tsp salt and 2 crushed cloves of garlic. Not overly spicy, it was a great compliment to our soft taco bar. Even the kids loved it!

Read review- re too much liquid so was concerned but followed as directed and no problem at all. Very easy to make. Overall quite good will make again. In the future would cut back the oil by 25%and maybe add finely chopped green pepper and add some heat. PS use low sodium broth or too salty.

AMAZING and SO flavorful. I ended up just cooking the rice as normal (not in oil) to make it a bit healthier. The flavor is perfect, not too spicy. I made a massive batch to freeze and add to enchiladas but I just keep defrosting it and eating it as a side. My husband can't get enough of it!
