This is an excellent authentic Mexican rice recipe (not to be confused with Spanish rice) that I make as a side dish with all of my Mexican dishes. The key is cooking the rice properly and using good quality chicken broth or stock.

A very simple tomato Mexican rice recipe. I can have this in the oven and cooking in one set of ads on the TV. If you don't have chicken stock, use hot water and chicken bouillon.

Ground beef, rice, onion, green pepper and fresh corn are simmered in a tomato sauce and beef broth mixture, seasoned with chili powder and garlic powder and topped with Cheddar cheese. Serve with flour tortillas, sour cream, and salsa.
