Combining a variety of toasted, dried chile pods with vinegar and garlic, this is the sort of hot sauce you might find on the neighborhood taco wagon. It is a little time consuming but well worth it.

Onion and garlic are sauteed with cumin, cinnamon and chili powder, then simmered with chicken broth. Blending in semisweet chocolate is the key to creating this authentic taste of Mexico.

This is an awesome Monterey Jack sauce that goes great over chicken enchiladas, or used as a dip for chips or Mexican-style appetizers.

Fresh-roasted chile peppers add zing to this authentic enchilada sauce, which can be made with either chicken or beef stock. Cayenne pepper can be added to make it hotter.

Mexican tortillas perfect for fajitas, quesadillas, Mexican pizzas, burritos, nachos. They freeze well. Just stuff them with anything you may have on hand! This recipe, I learned from watching my Mom in Mexico, however, nobody (not even my Mom) knows how much of every ingredient you are supposed to use, so I experimented with different amounts of ingredients and came up with this one, which is pretty good and not so loaded with fat. This is great to do with kids on the weekend, and something you can enjoy anytime!
